Bare with me for a quick minute. Today I am going to talk about something I never thought I would here on this lil blog.
Baseball.
While I do love a warm evening at the ballpark, enjoying some cheesy nachos and a cold beer, the actual sport is a tad boring to me even though I do have a love for my home team. I grew up playing and loving soccer, and still love soccer over many other sports. But lately, I have caught myself staying up late to watch my beloved Royals.
If you are living under a rock, the Royals have made it to the post season for the first time since 1985! I was just a few weeks old at the time, so I can say that I have been waiting my whole life to see our team actually have a shot at making it to the World Series. Many years the fans of KC root day in and day out for our team, believing that we will win that year. But sad to say, we have fallen short one too many times. But this year is different. We have held strong, and kicked butt if you ask me.
There has been many late nights watching all the extra innings and run after run, but the lack of sleep is minor compared to the excitement that is running through the veins of Kansas City.
Tonight marks the beginning of the second series and the last series before the World Series. Which means, only 4 more wins stands between us and making it to the end. we have waited a long 29 years for this time, and I believe we will win!
So for all the game day watching we will be doing this weekend, I knew snacks would be in order. Between sweets to cure those sugar cravings, and adult beverages to quench our thirst, an endless bowl of spicy taco mix was in order.
Salty pretzels, buttery peanuts, crunchy popcorn and cheesy crackers all come together and are tossed with a mixture of melted coconut oil, buffalo sauce and taco seasoning for one spicy kick. This is a grown up version of the popular chex mix. If you don’t care for coconut oil, simply swap it out with another neutral oil. And if the spice is a bit much for you, just lower the amount of buffalo sauce because this baby has some kick!
The wonderful thing about this mix is, you can make it ahead of time, then snag it out of the pantry when its game time! It holds wonderfully but beware, this mix goes quickly!
This weekend will be consumed with baseball, adult beverages and lots of cheesy taco snack mix if you ask me!

Ingredients
- 4 cups lightly salted popcorn
- 2 cups pretzels
- 2 cups gluten free cheesy crackers i](I used [Van's Say Cheese )[/i]
- 1 cup peanuts
- 1/3 cup coconut oil, melted
- 1/3 cup hot sauce (such as Franks Hot Sauce)
- 2 Tbsp Taco Seasoning
- Taco Seasoning:
- 1 Tbsp chili powder
- 1 Tbsp cumin
- 1 Tbsp onion powder
- 1 Tbsp garlic powder
- 1 Tbsp paprika
- 1 Tbsp oregano
- 1 tsp salt
- 1 tsp cayenne powder
Instructions
- Preheat oven to 300 degrees F. Line a large baking sheet with a silicon baking sheet or parchment paper.
- In a large bowl, add the popcorn, pretzels, crackers and peanuts.
- In a small bowl, combine the melted coconut oil, hot sauce and taco seasoning. Pour over the popcorn mixture and toss well to complete coat.
- Spread out onto prepared baking sheet evenly, trying not to overlap too much.
- Place in oven. Bake 40 minutes, stirring every 10 minutes. When done baking, remove from oven, let cool then store in an air tight container.
