All throughout high school, I had a go to lunch of everything bagel dipped into chicken tortilla soup.

It may sound odd, but hear me out.

Everything Bagel Hummus has all the flavors you love of those classic bagels but in a healthy, gluten free form! Creamy chickpeas mixed with toasted garlic, dried onions then sprinkled with sesame seeds and poppy seeds!

Despite coming with a healthy and delicious lunch of a whole wheat turkey sandwich, swiss cake roll, some carrot sticks and a Lifesavor mint, I would quickly kick my lunch to the curb when I found out the chicken tortilla soup was on the hot line.

This soup is what every chicken tortilla soup dreams to be.

Tender shredded chicken, a creamy, sweet & slightly spicy base that reminded me of eating a giant bowl of those cornmeal nuggets you get as a dessert at a Mexican restaurant.  There was the perfect amount of warmth and spice for my 16 year old taste buds. It was the perfect bowl to warm my insides and get my fill of Mexican food until I found my next endless bowl of tortilla chips.

What really made this lunch superior was my infatuation with dipping a chewy Everything Bagel into the soup. It may sound like oil and vinegar but they worked beautifully together.  The bagel was bold and complex. The crust of sesame seeds, poppy seeds and salt had that crunchy exterior to counteract the chewy inside.

When the soup and the bagel get together, angels sing. The spicy and slightly sweet soup plays off the savory and complex flavors from the garlic, onions, sesame seeds, poppy seeds and salt. Plus the bagel is the perfect vehicle for the soup straight into your mouth.

In effort to obtain the bagel flavor that makes my mouth water, I incorporated them into my next batch of hummus.  Needless to say, I have been through 2 batches. In a week. With no help from the other human that I cohabitate with.

All the ingredients are more than likely in your pantry as we speak. Therefore, there is nothing stopping you from enjoying an everything bagel in mere minutes.

Now, where is my bowl of Chicken Tortilla Soup?

Ingredients

  • 2 cans garbanzo beans, liquid reserved
  • 1.5 - 2 tsp garlic powder (2 tsp if you really like garlic!)
  • 1.5 tsp onion powder
  • 1 tsp salt
  • 2 Tbsp olive oil
  • 4-6 tablespoons reserved hummus liquid
  • For garnish:
  • 1-2 tablespoons Everything but the Bagel Seasoning
  • OR Poppy seeds, Sesame Seeds and Dried Garlic

Instructions

  1. In a high powered blender or food processor add the chickpeas, garlic powder, onion powder, salt, and olive oil. Start to process. Slowly add reserved liquid until hummus is creamy and to your liking.
  2. Place in serving dish, and sprinkle with poppy seeds, sesame seeds and dried garlic.
  3. Serve with crackers and vegetables!

    Can you believe I made it all the way through school having never eaten off the hot line? Crazy huh?! My Mom just made the best lunches I guess! haha! I love the look of this hummus! My husband loved everything bagels before he was diagnosed with celiac so I have to make this for him!
