Don’t answer that. You have probably have had pumpkin thrown in your face for the last month or so. And unfortunately the end isn’t in sight. So let’s all sit back and welcome it with open arms!
Don’t get me wrong, I do love pumpkin but dash of it here, tad bit there is where I draw the line. My latest obsession, beyond these pumpkin spice rice krispies complete with a brown butter glaze, is a spoonful of spice in my granola bars.
Now granola bars with pumpkin I can handle one or twelve of; I need those snacks in my life! Because around here it is everyone man for themselves. It is not my fault that the Mr doesn’t snoop through the fridge or panty for snacks. For once, perks of managing the kitchen.
On Sunday, I was making another batch of these granola bars but wanted to add a fall flair to them. With a pinch of pumpkin spice, vanilla yogurt chips and pumpkin puree, the creme de la creme of snacks was born. Cream of the crop. Pure perfection. I loved them so much that I felt like someone who hasn’t ate in days, shoving all the straggler crumbs into my mouth as I cut the bars into perfect lil portions.
The bites and pieces that fall helplessly as you cut the edges of brownies, cakes and bars is one the of top reasons I sign up for making our treats…a snack before the snack. Don’t judge.

Ingredients
- 2 cups old fashioned oats
- 1 cup brown rice krispies
- 2 Tbsp chia seeds
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/4 tsp salt
- 1/2 cup honey roasted peanut butter
- 1/4 cup maple
- 1/2 cup pumpkin pie puree
- 1/2 cup unsweetened almond milk
- 1/2 cup vanilla yogurt chips (or white chocolate chips)
- Sea Salt, to sprinkle
Instructions
- Preheat oven to 350 degrees F.
- In a medium bowl, combine the dry ingredients.
- Add the peanut butter, maple, pumpkin pie puree and milk. Mix well.
- Fold in yogurt chips.
- In a 9x9 baking dish, line with parchment paper. Add dough and spread out evenly. Sprinkle with sea salt.
- Bake for 27-30 minutes or until cooked through. Remove from oven, let cool on counter top for 10 minutes, then place in fridge to firm up, 30 minutes. (They will be too warm and crumble if you cut them right away. Same great taste though!).
- Slice into 8 bars and store in an air tight container.
