Recently, I have taken up Pilates. From a former weight lifter and cardio junkie, I can say I have not looked forward to my daily workout as much as I do currently. The love/hate relationship I feel while working and stretching muscles I never knew I had, is rather addicting.

It has become the hour that I soak into a different realm and forget about the outside world. It is just as much mental as it is physical. My muscles are pushed to their limit yet I have never embraced the fire I feel with every leg lift and booty work.   OH THE BURN!

As I gain personal awareness with my daily exercise of Pilates, I realized that I have started a slight obsession.  Not too shabby though, right? There could be much worse of things in this world that I could be infatuated with.

One of those things is peanut butter. But that is nothing new.  What human being does not want to dig straight into a jar of peanut butter? Am I right? Or am I right?

Homemade peanut butter (or any other nut butter for that matter), could quite possibly be the simplest thing to make. But if you have yet to make it, then I welcome you to try it out and see why you will never buy the jarred stuff again.

Just a tip though; make sure you buy roasted peanuts, or you roast them yourself before sending them for a whirl in the food processor. The roasting process gives off the natural oils in the nuts, which helps to create the ever so lovely creaminess of peanut butter. Personally, I buy roasted and salted as I adore the sweet and salty combo. But you can add salt and roast yourself, if that floats your boat.

I couldn’t just stop with roasted peanut butter; even though the last spoonful I took told me I could. One of my weaknesses is Peter Pan Honey Roasted Peanut Butter. Oh my lanta. That is heaven on earth, I tell ya. So honey was just dying to make an appearance here. Once the peanuts are smooth and silky, I add a bit of honey and a dash of cinnamon, mix well and take one too many spoonfuls for quality assurance. It’s highly suggested you do so as well.

So please excuse me while I go indulge in some Pilates with a side of peanut butter.

Ingredients

  • 3 cups roasted, salted peanuts
  • 3 Tbsp honey
  • 1 1/2 Tbsp coconut oil, melted
  • 1/2 tsp cinnamon

Instructions

  1. In a food processor or high powered blender, add peanuts. Process until smooth, 5-7 minutes.
  2. Add in honey and oil.
  3. Blend for another minute until smooth.
  4. Store in an air tight container; either refrigerated or in a cabinet.

    yum! homemade peanut butter is the best! but I have never made it with coconut oil in it! that sounds really good ;-) pinned!

    Peanut butter is something that I eat everyday. I usually just buy organic, unprocessed crushed peanuts from the health food store but I think I will have to try my hand at your honey roasted recipe. It looks and sounds seriously delicious!

      I would suggest to leave it out for a bit before using to soften it up. That is what we do. Or you can leave it in the cabinet so it remains soft. That is perfectly fine as well. Hope the helps!
