When I was younger, granola was never a household staple. In all honesty, I didn’t mind as it was usually overly crunchy, lacked the large clusters I loved and in all honesty, never had me coming back for more. But when I realized if I were to make it at home, I had complete control.

Ever since my first batch of homemade granola, my quinoa studded maple coconut granola, I have been a granola feen. Grabbing a handful as quick fuel as I run out the door or sprinkled (read that: loaded) onto a bowl of greek yogurt with fresh fruit. It is a simple, no thought breakfast that is essential in the morning when my coffee has yet to kick in. To curbs those cravings when pancakes just seem like too much work. Plus they are reserved for weekend breakfasts that seem far more special.

Since I have made white chocolate and cranberry granola, and dark chocolate cherry granola, I knew I needed a new spin. As I was enjoying a Reese’s Santa that ended up in my stocking on Christmas morning, I got an idea. Why has peanut butter not been introduced into my granola? I eat it daily already so another way to fit it into my diet seems like a no brainer.

Just like the chocolate granola, this one is more figure friendly and lightened up with not only applesauce rather than oil, but also peanut flour. If you have yet to try peanut flour, (which I also use in my hot cocoa mix), then you have something new to add to your grocery list. It is defatted peanuts that have been dried, leaving a low fat peanut flour that is high in protein!  With just a bit of water, you have peanut butter that is great spread on english muffins, with bananas or added into granola!

Full on peanut butter and loaded chocolate chips is the perfect addition to my granola obsession. Homemade granola is super easy to make, is tastier and much cheaper than store bought granola!.With all those going for it, there is no reason to not make this peanut butter cup granola to your ‘to make’ list!

Ingredients

  • 2 cups old fashioned oats
  • 1/2 cup peanut flour or PB2
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup honey
  • 1/3 cup unsweetened applesauce
  • 1 cup mini dark chocolate chips (such as Enjoy Life Chocolate Chunks)

Instructions

  1. Preheat oven to 325 degrees F.
  2. In a medium bowl, combine the oats, peanut flour, cinnamon and salt until mixed well.
  3. Mix the honey and applesauce until combined. Stir into the oat mixture until completely combined and mixture is wet.
  4. Spread out onto large baking sheet that is lined with a silicon mat or parchment paper.
  5. Place in oven and bake for 10 minutes. Stir, then bake another 10 minutes. Repeat two more times, for a total baking time of 40 minutes. Try not to break up any clumps as you stir.
  6. Once done, remove from oven and if you want, grab granola and squeeze together to create clumps. Let cool then stir in mini dark chocolate chips.
  7. Store in air tight containers.
  8. Enjoy with milk, over yogurt or by the handful!

Notes

*Ovens and oven temperatures may vary so keep an eye on your granola. It may need shorter or longer time to cook!

      You got that right! PB2 is essentially the same thing but with added sugar. So you may be slightly sweeter. But that may not be a bad thing ;)

    I love all of your granola recipes! I'm trying to avoid honey, and wondered if your granola recipes that include honey, like this one, could substitute maple syrup instead?

    PB2 is my jam! I love it so much that I buy it in bulk at Costco. I can still get my PB fix without all the fat, score! I can't wait to try this granola, those big clusters are perfect!

    I found this on pinterest, and I made it this morning, it was delicious!! I added the chips while it was still warm, so they melted onto the granola, not what I intended at first (I thought it was cooled down enough) but it ended up being just fine :) Thanks for the great recipe.

      I simply combined PB2 (peanut flour) with milk until consistency! If you are using unsweetened peanut flour, simply add stevia, monk fruit sweetener or maple syrup instead of water, till a pourable consistency!
