A dessert inspired snack, Peanut Butter Cup Chia Seed Pudding is healthy, filling and filled with good for you ingredients that will help power you through your day!
This pattern of desserts for breakfast on Mondays is a very good thing.
It is necessary with a weekend of being kicked out of your house at moments notice – or hour notice…- jut for strangers to walk around your house. Anyone else get weirded out with the idea of complete strangers poking around you house without your supervision? Your prized possessions for everyone to see? Just me? Please tell me it isn’t so.
It’s an underwritten rule to not open cabinets, drawers, look under beds when touring said house, but one potentially buyer decided to open our armor. An antique that my parents handed down to us. For years, my giant tube TV (oh yes.) lived inside. I love the idea of closing the doors and the TV is hidden, instantly brining my living room back to the 2000’s, rather than reminiscing 1985. Well Mr HIT, wasn’t so keen on the tube TV (how rude.) and instantly did away with it and replaced it with a flat screen. Not only replaced it, but mounted it onto the wall, replacing my mirror above my fireplace. No longer was my condo a bachelorette pad and no longer could I hide the TV. Oh the struggles of getting married.
Whoa side tracked. So the said armor is now left TV-less and we needed to fill the space. After some deep thoughts, the armor was transformed into our liquor cabinet. Mirror backing and rope lights make for one flashy armor. But apparently the potential buyer felt the need to open the cabinet and laid eyes on our liquor stash. It is quite a lot since we were thrown a Stock The Bar party before our wedding. What can I say, our friends like to drink. Then the buyer walked into my office where our leaning bookshelf holds all of our bar glasses, numerous bottles of wine and a few cookbooks. So everyone doesn’t have their entire bar selection out for the world to see? I guess the potential buyer likes to think we drink a lot.
That is neither here or there. I enjoy my wine while Mr HIT enjoys his Manhattans. It smooths me a night just as coffee gets me started in the morning.
Since the struggle of house searching and hoping the next house showing results in a buyer, I am craving all things sweets. From donuts, to banana fosters parfaits, I am liking this new theme of healthier yet indulgent breakfasts and snacks. Who am I to turn down more chocolate?
Chia puddings are one of the simplest snacks or breakfasts to throw together. Right along overnight oats! Simply mix the ingredients, add to a sealed container and let the little chia seeds go to work! A little over the year ago, I made my first chia seed pudding and was hooked. Chia seeds are nutritional powerhouses that puff up (for lack of better terms) and absorb liquid as they sit. They are filled with protein, fiber and antioxidants; and add the perfect crunch to granola bars. So when mixed with peanut butter and chocolate, they are a pretty ideal breakfast!
Peanut Butter Cups are one of my all time favorite treats so now that I can enjoy them but on a healthier level, I will be looking forward to breakfast each morning!

Yields 2
Ingredients
- 1 cup unsweetened cashew milk (or milk of choice)
- 1/2 cup low fat cottage cheese
- 1/2 cup peanut flour or PB2
- 3 Tbsp Truvia or sweetener of choice
- 1/4 cup chia seeds
- Topping: Chocolate chips or healthy peanut butter cup, if desired
Instructions
- In a blender, blend the milk, cottage cheese, peanut flour and Truvia until smooth. Add the chia seeds and blend for about 5 seconds just to incorporate.
- Pour into a air tight container or 2 individual containers. Place in refrigerate and let set for at least 3 hours or overnight.
- Top with chocolate chips or a healthy peanut butter cup, if desired!
Notes
*This pudding is great to prepare ahead of time and keep reserved in the fridge all week until ready to eat!
