I am all about desserts for breakfast. Who can debate with starting your day with an only seemingly, naughty treat?
There is those rare days that I do crave a savory breakfast of peppery and velvety sausage gravy over flaky biscuits. They have their time and place and usually it is the morning after a few cocktails, when my husband orders it at brunch. Because we all know that whatever the significant orders is up for grabs. But I would be iffy about it being a two way street…greedy. I know.
So when we are out for dessert and Mr. HIT eyes Banana Fosters, you bet it is getting ordered. You know, I just want a bite. Where that one bite turns into, “okay only one more. Twist my arm, just another tiny bite!” Then before you know it, the plate is polished off and I am trying to remove all evidence of caramel from the sides of my mouth.
I am dessert monster.
With Mardi Gras only a few days away, I have started to plan our menu. While I have never been to New Orleans or majority of the southern states, my taste buds sure do love some creole food!
The flames, the gooey caramel, the sugar crusted banana all hiding under a ginormous mound creamy vanilla bean ice cream that just melts down into every nook and cranny of the dessert. It is so irresistible. What is it about warm and ooey gooey desserts that make me weak at the knees? You get the best of both worlds. The heat warms your inside and is pure comfort. Plus sugar is good for the soul.
We all know desserts are good for the soul and this is thee perfect breakfast to start the day or healthy dessert to wrap up a long one! Greek yogurt is spruced up with cheesecake pudding mix and can be made ahead of time and pulled out of the fridge when you are ready to eat. The bananas are caramelized in a tiny amount of coconut oil and coconut sugar (or brown sugar if you don’t have/like coconut sugar). Wait a few long minutes for the bananas sugars to break down then pour over the Greek yogurt.
Sprinkle with toasted coconut flakes and you have yourself one gourmet treat.

Ingredients
- 1 teaspoon coconut oil
- 2 teaspoon coconut sugar (or brown sugar)
- 2 large ripe bananas
- 2 cups plain 2% reduced-fat Greek yogurt
- 2 tablespoons sugar free cheesecake pudding mix
- 1/4 cup toasted unsweetened coconut flakes
Instructions
- Peel bananas, and cut each banana in half lengthwise. Cut each half into 3 pieces.
- In a small skillet over medium-low heat, melt the oil and add the sugar.
- Add bananas to the pan; cook 2 minutes or until bananas begin to soften.
- In a mixing bowl, whip the greek yogurt with the pudding mix with a hand mixer until creamy.
- Divide the yogurt between two glasses. Top with bananas. Top each with 2 tablespoons coconut flakes and serve immediately.
