I feel like an imposter lately.

For so long, I steered clear of Asian style dishes. If you recall, me and Asian cooking are more of frenemies. But as time has passed, we are courted each other and started to move beyond our differences. They move a bit fast for me; a whole lotta work up front and sometimes the end result was a flop.  A plate full of soggy, over breaded chicken that left me feeling less than stellar. Not what I was looking for from a relationship.  So, on I moved.

But that was until I was introduced to a healthier cashew chicken. It was a quick love affair but not in your face love and left me coming back for more. Something I had never experienced with Asian cooking. Then one relationship, led me to another, and Shrimp Lettuce Wraps came into the picture.  Guess you could say things are getting pretty serious (Please quote that movie!). The shrimp brought a whole new level of excitement to our courtship. A velvety connection that I had a hard time resisting.

But the best was yet to come. I have found my ideal match; Honey Walnut Shrimp. A sweet sauce that takes mere minutes to whip together glazes over the quickly sautéed shrimp. The red peppers provide an unexpected heat to balance out the sweetness of the honey and the Greek yogurt lightens up the dish.

Lastly, the walnuts. Oh lawd. I highly suggest doubling the recipe, as you will devour them before the shrimp finish cooking. Which is pretty darn quick. The walnuts are boiled in a sugar water mixture that I have lightened up by using Truvia rather than sugar. Dreams to do come true. The slightly sweet coating is enough to balance the heat but not enough to confuse this dish for a dessert!

Serve on its own, over cauliflower rice, or if you are feeling scandalous, a big ol plate of jasmine rice! The sauce sinks into the rice making each bit full of flavor!

This is one love affair that I won’t be ending anytime soon.
