No Bake Baileys Smores Mousse Cups are a simple dessert that is filled with espresso and chocolate mousse and topped with a toasted marshmallow! A dessert you will have no idea is under 150 calories!
I am in the midst of experiencing parenting whoas! A rollercoaster of many ups and many downs.
Each week it is a new experience that God is testing us with. Last week it was Aiden’s first cold that quickly followed with RSV. Broke my heart and I couldn’t get enough snuggles in despite how fussy he was and the lack of sleep I was getting. An up and a down all wrapped into one. This week? We have finally embarked on the rough road of sleep training. Oh man. This one sure tests my patience. The thing is, he doesn’t have any issues going to bed at night. The poor little guy is so exhausted by that time, he zonks out halfway through his feeding. But why you ask? Well, that little guy refuses to nap during the day. A power napper if you will. Oya. Leaving one overly tired baby and one overly excited, wine enthusiastic mama.
Despite the frustration at the beginning of sleep training or nap training if you will, I hear the rewards make it well worth it. Boy, that better be true because hearing my little cry is so dang tough. And let’s be clear, we are talking five minutes of crying as we hope he puts himself back to sleep! I can’t let him go longer than that before I go running in there and rescue him. Brownie points for mama! With each struggle and success, I feel like I am getting the hang of this parenting thing. With the constant change of directions, this rollercoaster seems more doable!
Today is an exciting day, as we are celebrating not one but three new Mama’s! Natalie from Tastes Lovely, Isadora from She Likes Food and Jessica from Flying on Jess Fuel. I couldn’t be more excited for this gals since I am new mama as well! Natalie’s little guy is just a couple months old and is already a rockstar, as in rolling over at month old! Way to go Josh! And Isadora and Jessica are both expecting soon. All three of these ladies I met through blogging and have been such fantastic friends and resources. We bounce ideas off each other, build each other up and cheer each other on for big accomplishments! Creating friendships such as these, are one of the reasons I love blogging so much!

Myself with quite a few other bloggers thought to shower these ladies with bite size goodies to celebrate their littles! While I have a face to palm moment here, I thought no bake dessert shooters would be just what Mama’s need! Just a minor detail of them including Baileys. Oops! Let’s blame it on the lack of sleep, shall we? But the beauty is, these shooters taste just as great without the Bailey’s thanks to the coffee extract!
These little dessert shooters are everything I love in a dessert. They come together quickly, as in 15 minutes! They require no baking. Even better for a sleep deprived mama or during those dog days of summer coming up! And lastly, they include so many of my favorite flavors: chocolate, graham crackers, coffee and marshmallows! You can prepare the mousse ahead of time and even assemble ahead of time. Winning. Before serving, roast the marshmallows if you wish. I used a handheld lighter but use a kitchen blow torch, if you are fancy like that!
The only thing left? Dig in!

Tools I used to make this recipe:
- ½ cup fat-free vanilla greek yogurt
- 4 ounces reduced fat cream cheese
- 3 tablespoons Truvia Baking Blend
- 3 tablespoons cocoa powder
- ½ tablespoon vanilla extract
- 1 teaspoon coffee extract
- 3 tablespoons Bailey's Coffee Liquor (Optional)
- 1 cup lite whipped topping
- Graham Cracker Base:
- ½ cup graham cracker crumbs (Gluten Free, if needed)
- 8 Torched Marshmallows
- Graham Cracker Crumbs
- 8 bite size chocolate squares
- Mousse: In a mixing bowl, mix the yogurt, cream cheese, Truvia, cocoa powder, vanilla extract, coffee extract and Bailey's with a hand mixer until smooth. Gently fold in the whipped topping just until combined.
- Assemble: In eight small jars or large shot glasses, add 1 tablespoon of graham cracker crumbs into the bottom of each jar. Top with mousse.
- Garnish: Top each with one marshmallow, graham cracker
crumbsand one chocolate square.
