If I have to think of one dessert that I will always be up for, that would be Smores! I have always loved marshmallows and graham crackers so when put together they are one insanely delicious treat! 

They come together quickly, as in 15 minutes! They require no baking and can be made ahead of time, therefore making them the perfect make-ahead dessert for a crowd! Plus, no one will have any idea these little beauties are under 150 calories! You will fall in love with this No Bake smores cheesecake! They are a simple dessert that is filled chocolate cheesecake, graham crackers and topped with a toasted marshmallow! A dessert you will have no idea is under 150 calories!

ingredients you’ll need for this no bake smores cheesecake 

  • Vanilla Greek Yogurt
  • Reduced-Fat Cream Cheese
  • Baking Stevia or Regular Sugar
  • Cocoa Powder
  • Vanilla or Coffee Extract
  • Bailey’s Coffee Liquor, optional 
  • Lite Whipped Topping
  • Graham Crackers (gluten-free, if needed)
  • Marshmallows
  • Bite Size Chocolate Squares

how to make this easy no bake cheesecake

  1. Cheesecake: In a mixing bowl, mix the yogurt, cream cheese, baking stevia or sugar, cocoa powder, vanilla extract, coffee extract (if using) and Bailey’s (if using) with a hand mixer until smooth. Gently fold in the whipped topping just until combined.
  2. Assemble: In eight small jars or large shot glasses, add 1 tablespoon of graham cracker crumbs into the bottom of each jar. Top with cheesecake.
  3. Garnish: Top each with one marshmallow, graham cracker crumbs and one chocolate square.

how to store this easy no bake cheesecake

Store the cheesecake filling in an airtight container in the fridge. Then before serving, remove from the fridge, add graham cracker mixture to a serving glass and top with cheesecake mixture, toasted marshmallow, and chocolate square, if you wish!

can you make this smores cheesecake ahead of time?

Yes! You can prepare the cheesecake ahead of time and even assemble ahead of time. Ideally a day or so is enough.

Before serving, roast the marshmallows if you wish. I carefully used the stove top but use a kitchen blow torch, if you are fancy like that!

Ingredients

  • Cheesecake
  • 1/2 cup fat-free vanilla greek yogurt
  • 4 ounces reduced fat cream cheese
  • 3 tablespoons baking stevia or regular sugar
  • 3 tablespoons cocoa powder
  • 1/2 tablespoon vanilla extract
  • 1 teaspoon coffee extract (or more vanilla extract)
  • 3 tablespoons Bailey's Coffee Liquor (Optional)
  • 1 cup lite whipped topping
  • Graham Cracker Base:
  • 1/2 cup graham cracker crumbs (Gluten Free, if needed)
  • Garnish:
  • 8 Torched Marshmallows
  • Graham Cracker Crumbs
  • 8 bite size chocolate squares

Instructions

  1. Cheesecake: In a mixing bowl, mix the yogurt, cream cheese, Truvia, cocoa powder, vanilla extract, coffee extract (if using) and Bailey's (if using) with a hand mixer until smooth. Gently fold in the whipped topping just until combined.
  2. Assemble: In eight small jars or large shot glasses, add 1 tablespoon of graham cracker crumbs into the bottom of each jar. Top with cheesecake.
  3. Garnish: Top each with one marshmallow, graham cracker crumbs and one chocolate square.

Notes

*These shooters taste just as good without the Baileys due to the coffee extract! So feel free to leave out if you prefer.

    Well, I think at least one item at the shower needs a little alcohol in it. So I'm pretty happy about the Bailey's addition here! These are so cute. What a perfect treat! Good luck with the sleep training. I think I need that too - I haven't slept well in probably 15 years. Lol!

    I'm so sorry about the rough patch, Megan! My first boy was tough with the sleeping, and I had to play hard ball for the sleep training and it did pay off. He never took the longest naps still, but it was something! :) These mousse cups look so creamy and delicious, and I love that s'mores twist!

    Good luck with sleep training, I remember those days all too well. I always remember the first couple of weeks being the hardest, after that I think babies adjust and then it'll be smooth sailing before you know it. These dessert cups are such a great idea and that charred marshmallow on top is the perfect addition!

    Awww I feel you on the nap thing, my little guy only napped 20 minutes max his entire first year. We were able to sleep train him at night but no luck for us during the day. But somehow now that he's at daycare he sleeps a full 2-3 hours. WHA!?! These mousse cups look INSANE. I need to try one, and that toasted marshmallow is getting me all excited for warm weather!

    Aw! I'm so sorry little Aiden got sick! I'm terrified of Josh getting sick. I'm actually shocked we've made it all the way thru winter without him getting a cold. Glad Aiden is getting better. That must make you a happy momma. And ugh, sleep training must be TOUGH! But it's really a wonderful gift you're giving him. Nothing little babes need more than good sleep. I'm sure I'll be having to do that in another month or so. Well this virtual baby showers is just the nicest surprise! I’m so lucky to have you as a blogging friend.     Hang in there, sleep training really is hard. :( Eventually they get all those kinks worked out, but's hard on everyone for a little while. I think these smores mousse cups would be the perfect cure, though! They look sooooo good!

    I can't have coffee!! Before you get bummed on the no coffee thing I never drank it so the only time it's a pain is when I see recipes like this. It was the first item on my food sensitive list, unfortunately the second item was blue cheese. Blue cheese is one of my very favorite things so this does make me sad. Blue cheese free for over 2 years. But alas I digress, back to the coffe issue. Can I leave the coffe out and just use the baileys? Thanks
