What is the holidays without cocktails?

This is simply the best Homemade Baileys Irish Cream! It is perfectly sweet, smooth and a slight whiskey kick. Whip up a batch and add a splash to your morning coffee or over ice to end a long day!

It’s a close race between which menu I like to create more: food or cocktails. I mean, they are both essential to everyone being cheery during the holidays. There are must have appetizers, like I have had my eye on homemade Irish cream for quite some time but when it is 100 plus degrees here in the midwest during the summer months, the only cocktail I prefer is a margarita. So my impatient self has had to wait. Boo.

Well, my invisible friend, that time is upon us! As I plan on gracing my family this holiday season, I do not plan on showing up empty handed. They are going to be tickled pink (and probably tipsy…) once they pour themselves a glass of this!

This homemade Baileys is legit. It comes together in a jiffy. And only requires a few ingredients. Bonus. It is rich, creamy, smooth and potent. Double bonus. But the real pleasure comes from the fact that you can toot your own horn and be able to say, “Well why yes, I made my own Irish Cream Liquor.”  I am not quite sure there is a more perfect night cap to a holiday shindig. Maybe these no bake bailey’s mousse cups?

  1. this Homemade Baileys is perfect to make a few days, even a week, before the holidays or event! Simply store in a sealed container in the fridge, and it will be ready when you are thirsty!

Ingredients

  • 1 can light coconut milk
  • 1 can regular coconut milk
  • 1/2 cup coconut sugar (or brown sugar)
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 cup strong, brewed coffee
  • 1 cup Jameson Whiskey
  • Pinch salt

Instructions

  1. In a medium sauce pan, add both cans of coconut milk. Stir to combine. Add coconut sugar, vanilla and cinnamon, Whisk. Bring to a low boil, then reduce heat and let simmer for 10-15 minutes, stirring frequently, until mixture has reduced and thickened slightly.
  2. Remove from heat and add coffee. Stir in salt and Jameson. You may add more or less Jameson, depending on how strong you prefer it.
  3. Store in air tight containers in the fridge. Stir well before each use. Serve over ice, in your morning coffee or over ice cream.

Notes

*Recipe Modified From Oh She Glows *This recipe makes roughly 3 1/2 cups, if you let it reduce quite a bit. Therefore, making roughly 18 servings, which is a 1 1/2 ounce shot. *This past year when I revised the recipe and photos (per the comment at the top of the post), I removed the brown sugar to reflect a recipe that is free of refined sugars as that is the direction my blog is going. But feel free to use brown sugar if you wish. It will yield a truer Bailey's flavor.

    Your instructions say to add the "brown sugar" but there is no brown sugar included in the recipe ingredients. How much brown sugar? And, how big are the cans of coconut milk? We purchase unsweetened coconut milk by the half-gallon, so a "can" is not a measurable amount. I am looking forward to making this recipe, but would like clarification of both questions.       Hi David, I am sorry that I left that out! Yikes! The brown sugar is 1/2 cup, plus more if you want it sweeter. And our cans ar 14.5 oz here in the US. I am glad you pointed that out, it would definitely affect the recipe! I hope you try this and love it like we did!

    how long will this keep in the fridge and how would you compare the flavor to the most commonly store bought version, Baileys?

      Hi Bob, I am not sure how long this keeps in the fridge as ours never lasted too long. I would say at least a few weeks. Just shake before each serving. And for this version, while it is not exact, I preferred it as it was not as sweet and not as alcoholic. You can add or subtract the sugar and alcohol to your liking. I hope you enjoy if you try it!

    Would it be better to use hot or cold brewed coffee? I was thinking cold brewed would be smoother, but is it strong enough?

      Hi Stephanie, either one will work! Cold brew is definitely cold enough but just note that you usually have to dilute it as it comes double strength. Enjoy!

    I LOVE Irish cream. When I go out to dinner it's a toss up between getting a little glass of Bailey's or amaretto after dinner (the struggle is real!) BUT if I had the homemade stuff at home it would get a lot easier. I would totally skip the overpriced restaurant stuff and run home to pour myself a big glass of this deliciousness!

    Confused about the comment on using brown sugar in the Bailey's. Not seeing it anywhere. Do I use it or not. Plan on making it this weekend.

      Hi Patti, You can use brown sugar in place of coconut sugar. This past year when I revised the recipe and photos (per the comment at the top of the post), I removed the brown sugar to reflect a recipe that is free of refined sugars as that is the direction my blog is going. I will add a note saying you can use brown sugar in place of coconut sugar if you wish.

    Hey, um did you realize this is the exact same recipe as the one from the Oh She Glows website, except she published it a year earlier? I think it's really lame you didn't say where you got it. Just totally out of integrity.

      Hi Rebecca, my sincere apologies as yes this recipe was modified from hers. I switched recipe card providers a couple of months ago and many recipes were messed up, including my note and serving sizes to name a few issues I have encountered. I have had it credited it to her since I published this recipe but it looks like when I switched the recipe card, this recipe was affected. I completely agree and every recipe I modify deserves proper credit and I always give credit where credit is do. I have gone back into the recipe and modified to ensure the credit to OSG is included.
