I am rather in shock that August starts this weekend.

I feel like summer just started. And I have numerous bucket list items to still check off! Like getting a snow cone. I have seen far too many on instargram to not have indulged yet. Or how about the classic smores. Please tell me you have made them this summer?

I will even accept shortcut smores. Like smores cereal bars or even as far stretch as this tipsy smores milkshake. If you like ice cream, caramel, marshmallow and chocolate, then that milkshake is a no brainer.

Just sayin.

Confession. My smores game this summer has been less than par. I have had a bit of smores ice cream from our local shop which was gooooodddd. And then these babies. Two of my favorite worlds, colliding. Peanut butter and Smores.

Smores have been done in nearly every fashion and I am sure this take is nothing new but I love how simple it is. The base is my flourless peanut butter cookies, but I revised them to be made with stevia baking blend and you can’t tell one bit. So with only 5 ingredient peanut butter cookies in my repertoire, it’s rather dangerous. The best part of this dessert is you can whip up the cookies in advance! Bake the cookies the morning of or the day before, then just store in an air tight container until ready to devour!

Next, melt some semi sweet chocolate. I went with semi sweet rather than milk chocolate as the cookies are pretty sweet with the marshmallow fluff and peanut butter cookies, if you love all the sweetness, bring it on! Dip half of the cookies into the melted chocolate, then place on parchment paper to let harden. Again, you can even do this in advance! It holds perfectly in the fridge. With all the testing I did, we had these for about a week in our fridge. And yes, both the hubs and I were diminishing the stash daily.

Then when it’s go time, slather on a good layer of the gooey marshmallow fluff between two of the chocolate dipped peanut butter cookies and dig in! One bite and you will see why these cookies are the best of both worlds. You forget all about that campfire hassle you just skipped over!

Ingredients

  • Cookies:
  • 1 cup natural peanut butter
  • 6 Tablespoons Truvia or 3/4 cup sugar
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Other Ingredients:
  • 1/2 cup semi sweet chocolate, chopped
  • 1/2 cup marshmallow fluff

Instructions

  1. Cookies: Preheat oven to 350 degrees F.
  2. In a medium bowl, combine peanut butter, Truvia or sugar, egg, baking soda and salt. Stir until completely mixed.
  3. Using a cookie scoop (1 1/2 tablespoon is what I used), divide dough into 14 balls. Place onto an ungreased cookie sheet. (No need to grease as there is plenty of oil in the cookies.) Slightly press the cookies to flatten out.
  4. Place in preheated oven and bake for 8-12 minutes. This will vary based on how large you make your cookies. If you use a tablespoon size of cookie dough, bake for 8-10.
  5. Let cookies cool for 5 minutes on cookie sheet then move to a cooling rack. Let cookies cool completely.
  6. When ready to make the smores, add the chocolate to a double broiler. Melt the chocolate slowly. When melted, dip the cookies into the chocolate and place onto a parchment paper to set. Repeat with all cookies.
  7. When chocolate is set, add 1-2 tablespoons of fluff to one side of half of the cookies. Place another cookie on top and serve immediately.

Notes

*This dessert is perfect to make ahead! Make the cookies ahead of time; or you can bake and dip the cookies ahead of time then simply add the fluff when ready to eat!

    I hear ya girl! I still have wayyyyyyy too many things on my summer bucket list for it to be August (pretty much) already! I am definitely going to have to add these cookie S'more sammies to that list because these look incredible! I love that you made the cookies peanut butter flavored AND you used stevia!
