This week’s recipe combines three of my favorite things in the entire world. Yes, I have quite a few favorites that are often in rotation…sorry, short attention span. But three have stand the test of time (well, of the 28 years that I have walked this earth). Caramel + Smores + Ice Cream. Smush all three of those together and you have one killlerrrrr treat.
Have you ever had a tipsy milkshake? Well, they are the best of both worlds; dessert and booze. I can get my buzz on while fulfilling my sweet tooth! That makes me one happy girl.
I know some people may think I’m crazy for whipping up a caramel smores milkshake while there is still snow on the ground, but we consume ice cream nightly in our house. I can pass on cookies, cake and candies. But ice cream. You better watch yourself. I will fight you for the last bite. It is my weakness.
So it is only natural for me to present your new favorite dessert. Caramel vodka + vanilla bean ice cream + chocolate drizzle + toasted marshmallows + graham crackers = my kryptonite.

Ingredients
- 1/4 cup caramel vodka
- 4 large scoops vanilla bean ice cream (don't use light; there will not be enough fat to create the milkshake consistency)
- 2 Tbsp cocoa powder
- 6 marshmallows
- 1 1/2 sheets graham crackers, divided
- 1/2 - 1 cup ice cubes, depending on how thick you want it
- Cocoa Drizzle
- 2 Tbsp cocoa powder
- 2 Tbsp almond milk
- Sweet Leaf Vanilla Creme stevia , to taste (Or sweetener of choice)
Instructions
- In a plastic bag of food processor, grind up the 1/2 sheet of graham crackers into a fine crumbs and add to a small bowl. Set aside.
- In a small bowl, mix the ingredients for the cocoa drizzle.
- Dip the rims of two drink glasses into cocoa drizzle, ensuring to coat the rim well then dip in graham cracker crumbs. Set glasses aside.
- Meanwhile, preheat broiler, lay marshmallows on parchment lined small baking pan and add to oven. Let broil, until toasted; about 5 minutes. Set 2 aside.
- In a blender, combine the vodka, ice cream, cocoa powder, 4 of the marshmallows, graham crackers and ice and blend until smooth.
- Pour milkshake into the two glasses, top with whipped cream, cocoa drizzle and toasted marshmallow.
