Let’s talk about food envy.
You ever get it?
If you do, it’s the WORST. I am no stranger to it as I try to balance eating a healthy dinner when I venture out, to indulging a bit. It’s the best of both worlds when they collide and there is no envy in site.
But for those times when you clearly make the wrong decision and your mouth instantly starts to water at the site of those nachos next to you.
Yup. You guessed it. I had some major food envy this weekend.
On Saturday, we went to the Royals baseball game for a friends 30th birthday. If you are anywhere in the midwest, or America for that matter, I am sure you are experiencing the extreme, unbearable heatwave that Mother Nature is gracing us with. Not only is KC looking at temps in the high 90’s, we have nearly 100% humidity. Read that as instant puff ball of hair, clammy skin and clothes that are no longer dry the moment you step outside. And let’s just throw out being pregnant is not a plus. You know, for good measure.
I love going to the ball park, Stadium Cap Nachos…I am looking at you! And I can never turn down one of those Electric Lemonades served in a tall cup. Makes me feel like I am on a tropical vacation, just can’t see the beach.
Well yesterday, I saw plenty of both of those. And let’s just say, I was envious. Super envious. Especially that electric lemonade that I had to pass on. Believe it would have been shunned upon for a preggo sipping on one of those…
But my envy didn’t last one when I remembered this lemonade sitting at home. A refreshing drink was needed after sitting in that heat!
We all know my love of fruity drinks. They are necessary to spice things up beyond a glass of ice water. And not to mention easy to make. I love whipping up a pitcher of this to sip on all week long or before a summer party. No one will miss the booze!
Or if you are feeling it, add a splash of vodka in there. I won’t tell…
Fruity and mint are perfect together. I pureed fresh pineapple but if you want a shortcut or pineapple isn’t in season, simply use pineapple juice. It’s tasty both ways. Add some prepared lemonade, a few mint leaves, and you are ready to go!

Yields 4
Ingredients
- 2 cups fresh pineapple juice or a fresh pineapple, diced
- 2 cups light lemonade, such as Crystal Light
- 2 cups lime sparkling water, such as La Croix
- For Garnish:
- Lime wedges
- Mint leaves
Instructions
- If using a fresh pineapple, add the pineapple to a blender and puree well.
- Measure out 2 cups.
- In a pitcher, combine the pineapple juice and light lemonade. Stir to mix well. Add sparkling water and gently stir.
- In 4 medium glasses filled with ice, add the pineapple lemonade.
- Garnish with lime wedges and mint leaves.
