Ranch Pork Chops with Grilled Jalapeno Corn Salsa is the perfect summer dinner! Fresh crisp corn is charred to perfection, mixed with jalapenos for a spicy salsa then served with juicy, grilled ranch pork chops!
What is it about the smell of a charcoal grill that just screams summer? That conjures images of backyard parties complete with tiki torches, background filled with country music and chitter chat of friends?
That is exactly how I choose to spend every weekend during the summer. Well, that and at our lake house! But we can totally do the tiki torches and country music thing there too. Either way, summer is meant for outside get-togethers and my husband manning the grill. Which means my end of the stick for dinner is pretty darn simple. I will take that every day please.
This dish is just that. Summer gatherings. Dinner made simple. With simple flavors; fresh summer flavors at that! Corn is at its prime. Either way you eat it, on the cobb or off, it is hard to go wrong!
The grilled jalapeno corn salsa takes this dish to the next level. While the pork chops are juicy and seasoned with ranch seasoning, it is hard to deny the show of this meal is the charred corn. I can’t get enough of peaches and cream corn during the summer. It goes hand in hand with summer for us. The spicy jalapenos marry with the sweet summer corn to create the ideal flavor combination: sweet and spicy!
The salsa can be made one of two ways: grilling the corn on the cobb then cutting the kernels off; or your can cut the kernels off first then use a small grill pan or foil pan to char them. Either way, the corn will slightly char on the outside to create that ultimate smoky flavor and slight crisp.
These days, with a little one around, time is even more valuable. Meaning time with him, along with our friends as well! So when we are able to gather with friends, I would rather be enjoying my time with them, than cleaning up our mess. That is why Chinet® Classic White™ is a barbecue staple. Ingredients
- Grilled Jalapeno Corn Salsa:
- 4 small ears of corn
- Olive Oil non stick spray, or 1 tablespoon olive oil
- 1/2 cup fine diced red onion
- 1/2 small jalapeno, finely diced
- 1/2 cup chopped cilantro, not packed
- Juice of 1 lime
- Pinch chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Ranch Pork Chops:
- 4 boneless pork chops
- 1/4 cup ranch seasoning
Instructions
- Grilled Jalapeno Corn Salsa: Preheat grill to medium heat.
- Coat corn on the cob with olive oil spray. Season with salt and pepper. Place on grill and grill a minute on each side; or until lightly charred.
- Remove corn from grill and set aside to cool. Once cooled, Carefully cut kernels off the cob and place in mixing bowl. Add the red onion, jalapeno, cilantro, lime juice, chili powder and salt and pepper, to
season . Mix well. Set aside until pork is done and ready to serve. - Ranch Pork Chops: Meanwhile, Season both sides of the pork chops with ranch seasoning. Place on preheated grill; cook 5 minutes then flip. Continue cooking until pork reaches 165 degrees F, or slightly pink in the middle, 5 minutes. (Cooking time may vary depending on thickness of your chops.)
- To serve, top each pork chop with 1/4 of corn salsa and serve immediately.
