Spring To Do Lists. Do you have one yet?
We have already discussed my high hopes of growing a garden. Still pending, but hoping to report success very soon rather than eating ice cream to soothe my sorrows. Either turn out sounds pretty good now that I think about it.
Today’s post is special for a couple reasons. First! I have joined a few friends that have a long running series: 30 Minute Thursday’s! Isn’t that music to your ears? The first Thursday of every month we all gather to bring you meals that take no more than 30 minutes. Tops. It’s Friday Eve so who wants to spend hours in the kitchen? More than likely, we are spent, probably hangry (angry + hungry. It’s a thing) and ready to kick our feet up for the weekend. I know that is the usual feelings floating around our house. I hope you are excited about these delicious meals as I am.

Okay. Second! This dish has me all excited! It is ideal for Mother’s Day this weekend. It is delicate, healthy and perfectly seasonal. Strawberries are so juicy right now which brings back me to my Spring wish list. Last year I was too late to go picking strawberries. Who knew you could go strawberry picking? But this year I am anxious to go, gather buckets of juicy berries and devour them all! Strawberries and watermelon made up 75% of my diet while I was pregnant. Not a bad thing to crave, huh? Nevermind the ice cream I sprinkled them over…
Other things on my to-do list? Take Aiden to the zoo for the first time. There would be plenty of action for him there! We love taking bike rides so getting a ride behind cart for the little guy so we can join our evening rides is a must! And go on a picnic. May sound lame but we have never done it! Seems like we always have had too much going on to think about packing lunch up to go eat it elsewhere. But this year that will change! Aiden will love basketing in the sun and watching all the other park goers among us!
One last thing about this dish…mint is a game changer! Adding mint to a savory dish, such as in this balsamic grilled chicken, lightens up the flavors and ensures the strawberries don’t make it overly sweet. The salsa can be made ahead of time, ideally the same day that you choose to consume the dish to ensure the berries don’t get too soft. And want to make dinner even easier? Marinate the chicken the night before or the morning of to let the balsamic really soak in and flavor it even further! Then, when that dinner bell rings, simply flip on that grill and kick your feet up.

Ingredients
- Chicken:
- 4, 6-ounce boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
- Strawberry Mint Salsa:
- 2 cups diced strawberries
- 1/4 cup finely diced red onion
- 1/4 cup thinly sliced mint
- Juice of 1 lime
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Chicken: In a medium bowl or zip lock bag, add the chicken, balsamic vinegar,
salt and pepper. Mix well. Set aside to marinade while grill heats, or longer if time allows. - Preheat grill to medium. Once heated, add chicken and grill 5 minutes, then flip. Grill until it reaches 165 degrees F or no longer
pink on the inside, 6-7 minutes. (Time will vary depending on thickness of chicken.) - Strawberry Mint Salsa: Meanwhile, in a small mixing bowl, add the strawberries, mint, lime juice,
salt and pepper. Set aside for the flavors to marry while the chicken cooks.
