I’m gonna live in denial.

Denial that summer ends in 20 days. Yuck.

I have way too many summer activities to cross off my ‘Summer To Do’ list.  I have yet to visit the farmers market, happy hours on patios to indulge and county concerts to stomp around in my boots. Planning a wedding took more time than I would like to admit.

Time is just flying by. Faster than I want to believe. But it is the time at everyone gets overly excited for all things pumpkin, scarfs and boots. Side note – did you see that Starbucks has already come out with the pumpkin spice latte?! Next thing we know, Christmas music will be filled in every department store. For the love, can we keep to one holiday?!

Okay, back to summer. For 20 more days.

It is the time to start using up every delicious fresh veg that adorns our counter tops. Basil torn up in every dish.  Salsa with fresh tomatoes happening weekly and fresh fruit by that handfuls.

End of summer is best for sweet corn. Although I’d be just peachy with corn on the cob, sweet corn lightens up a salad and adds some major crunch. Spiralized zucchini (or Zoodles!) change up the typical romaine. Plus if you have not gotten onto the spiralizing train, you need to jump on. From fries, to strawberry cucumber poppyseed salad, and sushi inspired salad, spiralizing veggies has been a game changer in our house.

Sweet corn, spiralized zucchini and juicy cherry tomatoes come together for a salad bursting with fresh flavor. Not to mention takes a mere twenty minutes to come together. Which saves your time to whip together a salad dressing with only three ingredients – avocado, almond milk and ranch seasoning. How can you say no to that?!  

The dressing is borderline addicting. I may or may not have ate it with just a spoon. Simple ingredients that scream flavor. It tastes wonderful with grilled chicken as well! So warning you now that you need to make double!

For the next 2o days, I am going to live in disbelief that summer is almost over and drown my sorrows in a salad bowl full of summer.

Now what can be better than that?

Ingredients

  • 2 medium zucchini's
  • 2 ears of sweet corn
  • 1 cup cherry tomatoes, cut in half
  • 1 small avocado, diced
  • 1 cup almond milk
  • 2 Tbsp ranch seasoning
  • 1/2 tsp salt

Instructions

  1. Spiralize zucchini using the medium blade and add to a large bowl. Add tomatoes.
  2. Cut corn from the ear. Add to bowl with zucchinis. Toss well.
  3. In a blender, add avocado and almond milk. Puree until smooth. Add ranch seasoning and salt.
  4. Toss salad with avocado dressing and serve immediately.

Notes

*This salad holds wonderfully in the fridge for a make ahead meal. Just add salad dressing before serving. br]

    This looks totally delicious and re-freshing! I have never tried zucchini made like this before so I will need to give it a try! ... And I will 100% join you living in disbelieve that summer is almost over...feels like we just had winter, summer wasn't long enough!

      Hi Diane! Well thank you so much! And I always use unsweetened almond milk so then I can control the sugar content. That dressing is good on just about anything...much more than this salad! Enjoy!!

    This dish is awesome! I served it with enchiladas today for my card group, five other ladies. They could not stop complimenting me. One lady ate the salad first. It is very good, thank you so much.
