These are how I make it through my Monday Tuesday after a long weekend.

Snacks, snacks, snacks!

So tell me. How was your Labor Day weekend? Enjoyable? I hope so!

I took a weekend away, which was completely needed! This summer was incredibly too quick; moving and prepping for a baby will take its toll. And not to mention the anxiety that this baby has only 7 more weeks of rent left…oya.

So we took off to our family lake house on Thursday and came back home on Monday. The weather was perfection. Bright blue skies, ample amount of sun and a few (easy) boat rides and not mention, so much good food.

Not only did we take some time away, I took some time away from the blog, social media and nearly all forms of life. Sorry I am not sorry! When I head to our lake house, I forget all about my phone and the outside world. It’s completely refreshing.

To my fellow bloggers, you know how hard it is to turn work off when your work never really turns off. So thank you all to you that understand that it seems like I fall off the earth for a few days every now and then, but it is so needed for a mental recharge.

Now how about some delicious food?

With back to school in full swing and fall right around the corner, easy snacks are mandatory. Portable and quick snacks save those mid-afternoon cravings for a candy bar.  We have Kashi remakes, we have pumpkin flavored and no bake honey graham bars. And now we have these Cinnamon Pecan; which may be by far the cream of the crop.

They are sweet, crunchy, loaded with cinnamon, roasted pecans and sweetened with a bit of maple syrup. At first bite, I was blown away. They are held together with creamy almond butter, maple syrup and coconut oil and these bars could pass as a dessert! Yet they are secretly healthy for you!

They are easy to throw together and require no oven. So perfect for those holiday baking days heading our way. Because sometimes baked granola bars aren’t in the cards for me. I love the crunch of no-bake bars and these deliver!

Another perk to this recipe? They are completely customizable. Feel free to swap the pecans with peanuts, almonds, macadamia nuts, heck even pumpkin seeds or sunflower seeds for nut-free snack! And the almond butter? Sub with peanut butter, coconut butter or sunflower seed butter if you have a nut allergy.

With bars like these, snacking has never looked so good.

Ingredients

  • 2 cups old fashioned oats (gluten free if needed)
  • 1 1/2 cup brown rice krispies
  • 1/2 cup whole roasted pecans, roughly chopped
  • 1 tablespoon chia seeds
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup almond butter (or peanut butter)
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 2 teaspoons vanilla extract

Instructions

  1. Line a 7x 11 pan (or a 9x9 if you don’t have one) with parchment paper and set aside.
  2. In a large bowl combine the oats, brown rice krispies, pecans, chia seeds, cinnamon and salt. Mix together.
  3. In a small microwave-safe bowl, combine the almond butter, maple syrup and coconut oil. Microwave for 30 seconds to 1 minute or until the mixture is t and pourable. Add the vanilla and mix again.
  4. Add the almond butter mixture to the oat mixture. Stir until everything is combined well.
  5. Add the mixture into the prepared pan and spread out evenly; pressing into the pan with the back of the spatula or spoon.
  6. Cover and refrigerate until well chilled.
  7. Cut bars into 12 bars (or 10 if using a 9x9). For best results, cut bars when they are well chilled or they will crumble.
  8. Store in an airtight container, refrigerated.

    In the ingredient list you say 2 cups of oats, but in the directions you call for oat flour. How much oat flour do we need and how many cups of old fashioned oats? Thanks!

      Hi Lindsay! So sorry about that. I removed the oat flour entirely because it made them crumble. I forgot to take it out of the instructions from my previous trials. So just 2 cups of old fashioned oats is all you need! Enjoy!

      Hi Luisa, I have never tried with presoaked oats. The bars may be too soggy but if you try it out let me know! Enjoy!
