I am all sorts of in love with today.

Surprise for a Monday, right?  But we are finally in our new house! Never mind crawling over boxes and eating off paper plates, plastic silverware and having to venture to the garage to warm up my cup of coffee. No, that’s not normal?

Well, as nearly every new home owner knows, there are minor renovations upon moving into a new place. We are refinishing our kitchen cabinets and wood floors from oak to a pretty espresso. I can hardly stand it. But not having an access to a kitchen for the next week and half has me sorta freaking out.

The transformation will completely change the feel of the room. Hoping I fall in love. Always that side that we may not be happy with our choice but what is not to love about a clean, sleek kitchen? While I love the look of a white kitchen, I learned from our last house that they are very hard to keep clean and once you paint the cabinets white, there is no going back. Except ripping them out and starting over. And with that, all I see is dollar signs. Oya.

So dark it is! Matched with new, stainless steel appliances? My little heart is gonna pitter patter upon seeing it all put together!

You know what else makes my little heart pitter patter? These Cinnamon Roll Granola Bars!
As in, I devoured them all in a mere 3 days. Yes. Everything single bar. I couldn’t help myself with the almond butter and oat goodness.

These Cinnamon Roll bars are: Nutty. Chewy. Sweet. Almond Buttery. Filling. Wholesome. Highly Addicting. White Chocolate bites of goodness.

The come together quickly and all in one bowl. Less kitchen equipment is music to any cook’s ears. Simply add the dry ingredients and mix. Add your wet ingredients and give it a good stir. Keeping stirring. Get an arm workout in while you are at it. Place in a baking dish, sprinkle with white chocolate chips and bake.

I like to bake them slightly on the undercooked side as they will continue to cook once removed from the oven. But doing so ensures the bars stay tender, almost as uncooked cookie dough.

I consider that winning.

  1. having granola bars on hand are not only easier on your wallet but they are also healthier! Filled with only ingredients you can pronounce and can control!

  2. store in a sealed container in the fridge or individual baggies for grab-n-go options!

Ingredients

    Dry:
  • 1 1/2 cups old fashioned oats
  • 1 cup brown Rice Krispies
  • 1/2 cup vanilla whey protein powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Wet:
  • 1/4 cup almond butter
  • 1/2 cup + 2 tablespoons unsweetened applesauce
  • 2 tablespoons maple syrup (or 1/4 cup if your protein powder is not sweet)
  • 1/2 cup unsweetened almond milk
  • Toppings:
  • 1/4 cup raisins (or leave out if you don't like raisins in your cinnamon rolls)
  • 1/4 cup mini or regular white chocolate chips or vanilla yogurt chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine the dry ingredients.
  3. In a small microwavable bowl, add the almond butter, applesauce, maple and milk. Microwave for 30 seconds and stir to mix well.
  4. Add the wet ingredients to the dry ingredients. Mix well.
  5. Fold in yogurt chips and raisins.
  6. In a 8x8 baking dish, line with parchment paper. Add dough and spread out evenly.
  7. Bake for 25-28 minutes or until cooked through. Remove from oven, let cool on counter top.
  8. Slice into 9 squares and store in an air tight container.

    Ugh... just talking about the kitchen remodel makes me want to do the same! But I totally understand why you would be freaking out not being able to be in the kitchen the next couple of weeks.     I totally know how you feel. We moved last winter and before that we were renting this terrible old house that they actually tore down after we moved out! It was not a fun time. I can imagine how excited you'll be to get in your new kitchen! We love our homemade granola bars -- definitely going to have to try these!

    OMG I totally hear you on the white cabinets. We did that. And I COMPLETELY regret it. Painted white cabinets are the hardest thing ever to keep clean! Between two toddlers, two dogs and a husband, I feel like I'm constantly scrubbing the cabinets!

    Congratulations on the new house! And your new kitchen sounds like it is going to be heaven! I'm totally jealous♡ I'm also jealous of these bars! I LOVE granola bars, but a granola bar that tastes like a cinnabun???? Forget about it! I'm surprised they lasted you three whole days. Maybe I'm a hog, but I would have hid In the walk in closet (for fear of being judged) and ate them all. In a day :) Pinning and making these. Stat! Cheers and best of luck with the reno!

    Ohh.. I can't wait to see your new kitchen! (You are going to share right?!?) I like the idea of an all white kitchen in theory.. but I don't know how well it would work out with kids. You may be right.. dark is the way to go! And these granola bars?! Perfection!!

      Hi Fotoula! I am 99.9% sure you can leave the protein powder out and they will turn out, but if you prefer, you can add more oats. I would suggest adding more maple syrup to make up for the sweetness of the powder. Enjoy!

      Hi Erica, I have not made them without the crispies so I can't say for sure. But if you do, you may not need as much liquid. I would suggest not adding as much almond milk. Hope that helps!

      Any nut butter you like! Cashew may be a good substitute as it is more nuetral tasting than peanut butter.
