I know. I know. Shocker right?

But sometimes in life, the simplest things bring the greatest pleasure.  Last weekend was Valentines Day (in case you live under a rock…), and while we usually choose to forgo the crowded restaurants for some quality time whipping up our own dinner in the comfort of our PJ’s, we did decide to venture out.  On Friday night, though. We have to still enjoy our tradition of a night in with our PJ’s!

For Christmas, my in-laws gave us a gift card to the Country Club Plaza, a downtown shopping and dining district that is among my favorite places in KC. The character of the old Spanish architecture and the ambiance is more quaint than your neighborhood steak house. All diners are out for a good time, relax after a long week with a cocktail in their hand and to enjoy some indulgent grub. And it isn’t uncommon to see a familiar face or two from across the restaurant.

Better double the batch as it will go fast!We chose to go to a favorite of ours, Seasons 52. Have you been? I am all about their theme; celebrating seasonally inspired dishes that are just as indulgent as your local Olive Garden, yet under 475 calories. Their rustic cooking techniques let the natural flavors of the food sing.

I can see my own style of cooking when pursuing through the menu so naturally, I want one of everything. And the portion sizes if you were wondering could rival any other steakhouse. No diet dining here. (And this is not a sponsored post; I just truly love their restaurant and food!)

Each time I start to scan the menu, I start to do two things, find what I can’t wait to have in front of me and second, what do I need to recreate at home! It was a toss between the tender pork medallions over a bed of silky potato mash doused in a zesty jus that I wanted to drink solo; or the caramelized sea scallops over a butternut squash risotto. The scallops won as I have a special place in my heart for them. It was what I first swooned Mr. HIT with (please excuse the photos! You are viewing my first post!). With that being said, you bet I will be reinventing at home.

Scallops aren’t the only way to my heart though. This Salted Dark Chocolate Cashew Butter is the other. If your love of cashews is as deeps as mine, then this homemade nut butter is a must for you! The velvety cashews give this nut butter a slight sweetness with all the creaminess of your favorite store bought butter.

And the salted dark chocolate? No explanation needed. Now excuse me, while I go fulfill my heart!

Ingredients

  • 2.5 cups roasted, salted cashews
  • 2-3 tablespoons maple syrup
  • 2 teaspoons dark cocoa powder (or regular cocoa powder)
  • 3 tablespoons melted coconut oil (or natural oil if you don't have coconut)

Instructions

  1. In a food processor or high powered blender, add cashews.
  2. Process until smooth, 3-5 minutes.
  3. Add in maple, cocoa powder and coconut oil.
  4. Blend for another minute until smooth.
  5. Store in an air tight container; either refrigerated or in a cabinet.

    I love the taste of nut butters and love that you know exactly what's inside. I've never made mine with maple syrup but imagine it would taste so good. I'll be trying it soon!

    Could this be made with liquid stevia or Xylitol? I am 2 months into The Wheat Belly diet, but would love to try this. Thanks:)

      Hi Michele, I do not know as I have not tested it. My only concern is when you add cocoa powder it would need another liquid to counter act it. You can try though! Or add coconut oil and the stevia in place of maple. Not sure if you can have that on the Wheat Belly diet. But Let me know how it goes if you try it!

      Ha, it has a slight taste of them but its slightly sweeter than peanut butter. Which is like gold to me ;)

    I found you through Mountain Mama Cooks and I love your site! I have a Vitamix and attempted to make this nut butter, but had a difficult time. The mixer blade kept getting stuck and the motor started to smell several times (the first being when the cashews were to be blended until smooth for 5-7minutes). While my finished product is a bit grainy and tastes delicious, but do you have any suggestions as to what I can do next time to make it easier (and smoother??). Thank you!

      Hi Amy! Welcome and thank you for your sweet words! Did you use roasted nuts? Or unroasted? Because if you use unroasted there will not be enough oils in the nuts to break down and create that smooth consistency. If you did use roasted, let me brainstrom some more. Did you use the stick to push the nuts down so they reached the blade? And it started to smell because it was getting overheated because it was having a hard time churning the nuts. Let me know and we can go from there!

      Hi Cheryl! Thank you! And I would say a week or two. Ours never lasts that long :) If you are worried about the shelf life, I would store in the fridge, but it will be more solid when you go to use it. Enjoy!

    Hi! We just bought some cashews to make a butter, but they're not salted. Can we add salt to the recipe to make up for it and how much would you suggest?

      Hi Ashley! I would suggest adding salt definitely! Just add with the maple, coconut oil and cocoa powder. Just make sure your cashews are already roasted and not dry roasted. The nut butter needs the oils created when roasted. Hope you enjoy!!

        So my question is what is the difference between roasted and dry roasted?

          Roasted is with oils, where as dry roasted is without oils. To make nut butter, they have to be either raw, or roasted with oil. I have found that when I use dry roasted the nut butter will not become smooth, rather clumpy. Hope that helps!

      Hi Kim, You can make this with raw cashews and I don't think you would need to soak. I have never tried soaking nuts before making nut butter but feel free to experiment! I would add a touch of salt as I use roasted cashews with salt. Enjoy!
