Saturday. Sunday. On repeat.

While I have been a Vitamix lover for about 4 years running, the moment I got my little hands on the BlendTec 725, I new a new love affair was starting.  The first thing I noticed was how light the base was.  Coming in at 10 pounds, this puppy isn’t hard to hide in the cabinets then take out for each use.  The face of the machine is a touch face,  illuminated screen. Made me feel like I was in the 21st century again, compared to my single dial Vitamix.

To make life easier, it comes with preprogramed settings: Smoothie, Salsa, Ice Cream, Whole Juice, Hot Soup, Clean.  While the smoothie and hot soup settings are among my favorite, an incredibly convenient one is the cleaning setting. With a bit of soap and water, turn her one and in moments you have a clean blender jar! So helpful when making your own peanut butter and almond butters! Those jars are hard to get clean after whipping up a batch of those.

With all the smoothies and soups you can whip up with this puppy, don’t forget how easy it is to make your own salad dressings.  Just imagine the possibilities of healthy, homemade dressings? Much like my peanut dijon dressing or my maple dijon dressing, today’s dressing is another staple you can keep in your back pocket (or fridge is probably better..) to dress up an ordinary salad!

Soy Ginger dressing coats a Thai inspired salad loaded with juicy chicken, crunchy, roasted cashews and ample amounts of veggies!  With minimal ingredients: soy sauce, rice vinegar, honey, ginger, cashew (or peanut) butter, garlic and a bit of red pepper flakes; you have a healthy and Asian inspired dressing in minutes. I simply threw all the ingredients into the jar of my BlendTec, used the “Add 10” feature, and in seconds I had an ultra creamy dressing ready to be devoured.

Now how about them apples? I mean cashews…

Ingredients

  • Dressing:
  • 2 tablespoons low sodium soy sauce (or gluten free if sensitive)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1/2 tablespoon cashew or peanut butter
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon garlic powder
  • Pinch red pepper flakes
  • Salad:
  • 4 - 6 cups chopped romaine leaves
  • 3/4 cup shredded carrots
  • 3/4 cup shredded red cabbage
  • 1 small red bell pepper, diced
  • 1/2 cup edamame, if frozen then thaw
  • 1/2 pound chicken breasts, cooked and diced
  • 1/2 cup salted and roasted cashews, chopped
  • 2 green onion stalks, sliced thin
  • Handful cilantro, diced

Instructions

  1. Dressing: In a BlendTec, add all the ingredients for the dressing. Turn on to power 5 and blend for 15 seconds or until dressing is creamy. Set aside to chill while preparing salad.
  2. Salad:
  3. In a large mixing bowl, toss the lettuce, carrots, cabbage, red bell pepper, edamame, and chicken.
  4. Drizzle with the dressing. Divide between two bowls.
  5. Top with the cashews, green onions and cilantro.
  6. Serve immediately.

    well, seeing as i've always wanted to make my own nut butters (and my ninja blender couldn't do anything like that), the first thing i'd make in the blendtec is the vanilla espresso almond butter! i don't know if you've ever tried Justin's brand of nut butters but they make a vanilla almond butter that is out of this world dee-lish. I can only imagine how much better the addition of espresso would make it :D

      Oh Ninja's can't do that?! My girlfriend has one and she was asking me how i liked my BlendTec/Vitamix's and I couldn't compare them as I had never tried a Ninja! So thank you for letting me know :) And I have tried Justin's...so good! But i just don't want to fork over the money for them ;) Thanks Valerie!

    This salad looks so delicious. I love cashews and chicken in my salads. Perfect for this time of year as it's getting hot here and I'm turning more and more to salads. I'd love to make your Honey Sriracha Hummus as it sounds amazing, that would be my first recipe made in the blender.

    I would love to try making some nut butters- the espresso almond butter sounds fabulous! I just know my sad little old Oster blender from like 1950 couldn't hold up to a nut butter, but it would be so awesome to have a powerful blender that could!
