This salad is perfection. The ideal way to kick off any meal, date night or family holiday.  Speaking of, this salad would be perfection on Easter Sunday!

I am loving the cucumber in this salad. So crisp. So refreshing.  And oh so different than arugula, romaine or spinach you typically find friending strawberries.  Plus, its spiralized! It automatically makes everything more fun. Period.

Then there is feta.  I love feta for many reasons. Its salty and creaminess are so flavorful that a little bit goes a long way. The fresh strawberries provide a sweetness to cut the saltiness and crispiness and to tie this salad together.

The cherry on the sundae is the poppy seed dressing. My favorite that I have been unable to recreate at home (boo!) is Panera’s Poppy Seed Dressing. Granted, there is a bit of ingredients I usually stray away from, but you gotta live a lil, right?

Ingredients

  • 2 large cucumbers, spiralized using Blade A
  • 4 cups strawberries, sliced
  • 1/2 cup feta, crumbled
  • 1/2 cup Poppyseed Dressing (I love Panera's)

Instructions

  1. In a large bowl, toss cucumbers and strawberries together.
  2. Divide among four plates, sprinkle with feta and pour 2 tablespoons dressing over each salad and serve immediately!

Notes

*This salad holds wonderfully in the fridge for a make ahead meal. Just add salad dressing before serving.

      Hi Dawn, in the post I mention that I use Panera's Poppyseed Dressing. You can find it at Target's and must grocery stores in the refrigerated dressing section.

    What a delicious, light and refreshing salad. Doesn't it drive you crazy when you cannot replicate a recipe from a restaurant. Usually it's more fat or sugar than you want to put in. This is going to be a delicious salad for a hot summer day.

    Hello, I thought I read somewhere here on how to use the spiralizer. I bought everything today including the spiralizer. I can't find the information on using it correctly. Can you please help. Thank you very much and I am going through your recipes. They look wonderful, healthy and easy. Maura

      Hi Maura, I really don't have a guide on how to use it, but I simply slice off each end of the veggie (flat surface so the prongs have an even surface to hold onto), then I place the blade in, and add the veggie to the prongs and turn the handle. Check out http://inspiralized.com/what-vegetables-can-be-spiralized/...as she has links to nearly any veggie that you may need to spiralize. Enjoy!!
