It’s some fancy toasted bread! Not just any bread. But my kinda toast.
Bruschetta is our go-to appetizer for as long as I can remember. For good reason. It’s easy, quick and you can trash it up in nearly any fashion you desire. Let’s see some of our favorites I have put up here (please don’t judge the pictures…the flavors are on point though, I promise!) We have sun dried tomato with fig jam , raspberry with whipped honey goat cheese and caramelized maple butternut squash with prosciutto (my husband’s fav!).
Bruschetta, crostini’s or whatever you want to call them, they are extremely easy to make and the best part is, you can customize them however you like!
Let’s start with the base. We love a nutty whole grain loaf. Something that is sturdy though is a must. If you choose a soft bread, it will fall flat once you layer on the yummy toppings. Unless you enjoy eating them with a fork. It’s your meal anyways…but if handheld is what you are going for, sturdy is better!
Second, layer on the flavors! While a spread is not necessary (think Caprese), I believe some sort of cheese or spread helps tie all the components together. And who can say no to cheese or a creamy spread? Today, I toasted the baguettes with a bit of olive oil and sprinkle of garlic salt. The saltiness pairs perfect with the velvety goat cheese. And the slight sweetness of the cheese only adds to the heightens the next layer.
The corn! Oh, sweet corn how I love you. With all the plethora of sweet corn that has been on sale lately, we have been devouring it morning, noon and night. From sweet corn & basil hummus to corn and red pepper mac and cheese. Both recipes use raw corn which is incredibly crisp and so much sweeter than its cooked counterpart. Plus, it couldn’t be any simplier…slice off the ear and you are ready to go! It’s great in salads too!
With a sprinkle of fresh basil on top, you have an appetizer that takes merely 10 minutes to whip up. So, now where is my margarita?

Ingredients
- 1 loaf of your favorite whole grain bread or baguette, sliced
- 4 ounces soft goat cheese
- 1 teaspoon garlic salt
- 1 cup fresh corn kernels (raw)
- 1/4 cup thinly sliced basil
Instructions
- Preheat your broiler.
- Place your sliced baguettes on a sheet pan. Spray or brush both sides with olive oil or
non stick spray. Place in oven and toast on both sides, 2-3 minutes. Keep an eye on them as each oven broils differently and they go quickly! - When toasted, sprinkle with garlic salt.
- Top with crisp corn and basil.
- Serve immediately.
