When we bought our new house, one thing we were excited to leave behind were the ‘extra’ roommates that came with condo/apartment living. For every apartment goer, those frustrating memories of upstairs neighbors that walked like elephants or liked to have a ‘concert’ at 2 am.

So when we came to the realization we had ‘roommates’ among us, we were rather disappointed. But that is the first of many emotions.

One evening last week when my husband arrived home from work to check on the cabinet gents, they brought it to our attention and asked if we heard any ‘critters’ in the ceiling.

Um, what?

Much to our surprise, we did indeed have roommates. Quick feet, tiny critters running around in our ceiling. As in, between our first and second floors. There little nails shuffling from my kitchen to my dining room. A few thoughts flew through my head…how did they get in?! What are they? Please don’t tell me they are going to die up there….that is a whole other world of problems that I don’t want to deal with (or smell.)

So after a few rounds with animal control companies, and to my dismay, we realized we were not at the top of their priority list.

What do you mean you can’t make it out here until Monday? It’s Thursday! I am going to have dead animals in my ceiling!

Not exactly how I planned my first few experiences in my new house panning out.

Enough was enough, according to my husband. So yesterday after brunch, his bloody mary’s enticed him to fish them out himself. Luckily, my in laws and brother in law were there to join in on the craziness because there is no way in he** I am getting near whatever has been getting cozy in my home

All I can think of is Eddy and Christmas Vacation.

“Clark: Russ, go get the hammer.

Ellen: Clark, what do you need a hammer for?

Clark: I’m gonna catch it in the coat… And smack it with the hammer.”

Over and Over.

To make a long story long, the critter ended up falling between our bathroom and dining room wall. The poor little fella was stuck. Luckily he fell right behind an electrical outlet. The oh so handy men my husband, FIL and BIL are, they jiggered up a DIY trap (as in a large trashcan). They pried out the electrical outlet and placed the trashcan over it so the stuck creature could pop out.

Upon a glimpse of light, the critter popped his head out. Our roommates are birds! No squirrels, thank you

The bird managed to jump into the can so we could slid the lid over and run outside to let the little guy go. After a bit of confusion, he hopped around, found a snack and some water before flying off.

A bit of relief fell over me. Birds are far less dangerous than squirrels. They won’t be chewing through our electrical cords anytime soon. As for his friends? We are hoping they are coming and going as we don’t hear them at night; only during the day. We have a few plans of actions if they come back but I believe you have heard enough and are ready for some food!

Like as in yesterday. The creaminess of the avocado against the crunchiness of the toast is one stellar snack. And the endless ways to jazz it up only means you could practically indulge every day and never have a repeater. But this combo, I highly suggest repeating.

With strawberries finally in season, I have been going to town on them. As in buying a 4 pounder at CostCo and consuming them all by myself in a matter of days. There are things I am glad the hubs doesn’t care for. #selfish #Iknow

Whether you are whipping it up for a quick appetizer, a lunch time snack or a solo dinner, it is sure to please. The salty blue cheese, the sweet strawberries, the creamy avocado and the crunchy, whole grain toast all come together pretty great if you ask me.

A simple, no fuss appetizer that is sweet, savory and salty! Strawberry Avocado Toast with blue cheese crumbles is healthy and indulgent all in one bite and takes minutes to make!

Ingredients

  • 4 - 1/4 inch slices of whole grain baguette
  • 1 small avocado
  • Dash Salt and Pepper
  • 4 small strawberries, thinly sliced
  • 2 tablespoons blue cheese crumbles

Instructions

  1. Place the baguette slices on a small baking sheet. Lightly spray both sides with non stick cooking spray. Place under broiler for 5 minutes or until edges are toasted. Flip over and toast other side. Remove from oven.
  2. In small mash, lightly smash the avocado with a bit of salt and pepper.
  3. Spread the avocado onto the slices of toast.
  4. Top with the sliced strawberry and sprinkle with the blue cheese crumbles.
  5. Serve immediately.

    Oh my gosh, I have to be honest - birds scare me more than squirrels! We've got something shuffling through our ceiling from time to time as well and we've been telling our landlord over and over again. I just hope it's nothing with gnawy teeth! As for avocado toast - we've been eating a lot lately! My 8 month old goes crazy for them! I won't be giving her blue cheese but I definitely need to try adding strawberries, looks divine! And sneak the blue cheese on my avocado toast :)

    If a squirrel was hiding in our house, my husband would want to fish it out and make it the house pet. He (and I) love squirrels, but them chewing up cords would be really costly!

    Gah! Even if they were just birds I would still be slightly freaked out. I don't like the idea of anyone in my house without my knowledge...haha. That goes for wild animals too :) This toast looks awesome! I'm a total lover of all things avocado and this toast is perfection!

    I can totally relate to this story, we had a similar situtation... BUT it was a bat, and it didn't go easily. It actually got out when we popped out a cam light and was flying around my house. We locked it in a room and my husband put a hat on and a scarf around his neck {I am not joking} and went in with a lacrosse stick. He actually caught the thing and opened a window and with a little toss of it flew away. Hopefully far far away. Anywho, I love this recipe I never thought of putting strawberries with my beloved avocado.

    Loved reading this story and so glad it was only birds!! Thanks gosh. Could imagine if it was rats or something. I kept thinking don't let it be like that show Infested. Have you seen that show. Yuck! This avocados toast looks delicious. I just jumped on this train and I am loving it. I need to try this asap. I have everything in my pantry. Lunch? ;-)
