Oh hey Monday. So not happy wonderful of you to show your face again!

I don’t know about you, but this weekend was wonderful and relaxing for us. First time saying that for awhile! First off, I felt like a huge weight is off my shoulders after last week. As someone that loves to ensure everything is finished and up to par, life can get overwhelming. But putting my feelings on paper (or computer…) to you guys, helped so much!

If you are feeling overwhelming, I really urge you to spend some time with yourself and writing down those worries. Most of the time, they aren’t as stressful as you make them out to be. Atleast in my mind that is how they work!

This weekend I spent some time away from the blog and we did some house chores. I even painted our front door! I am not sure what it is with our neighborhood, but it seems as having an odd color door was a requirement. Three out of four houses have a shade of red. Then the other just painted theirs a mint green. Hmm. And our door? Dark purple. Oya.

The lady that owned our house prior to us had an obsession with purple. Purple drapes, purple towels, purple bedding, purple decor ev-ery-where. So when she asked to take her purple drapes with her, I gladly obliged. So nice of me, right?

Right.

So, this weekend I decided to say farewell to that front door and make it more our style. See ya dark purple, hello charcoal! I am much more of a neutral colors sorta gal and with this house, it is everything grey, silver, white, cream, espresso…more of a modern classic. I have pops of color here and there but I love having more of a blank slate to work with. My next venture is finding a new couch for our living room…any loves out there? Ones I need to look out? I am not much of a decorator…thank goodness for my sister in law that is an interior designer. She actually came over after we moved in and decorated my whole house.

Oh yes. As in, I put our decor out in one room and she went to town! Heaven sent I tell ya.

You know what else is heaven sent? THIS pasta!

When I get a hankering for pasta, it is usually pretty strong as I don’t crave it that often. I bet you think thats a crime! But truth be told, I have never been much of a pasta lover. So when my latest crave came on, I wanted it fast and with loads of summer flavor.

Enter my stove top pasta. But don’t worry about it being loaded with a heavy sauce that will weigh you down, I lightened it up!

How you ask? Greek yogurt! Another secret ninja…sorta like cauliflower! It creates a creamy, silky sauce yet light on calories. Then I used one of my favorite cheeses, provel! It is an ultra creamy cheesy that has magical melting powers creating the more luxurious of sauces. If you can’t find provel in your gourmet cheese section of your grocery store, just sub mozzarella! Mozzarella is actually one of the cheeses in provel.

Then, the fresh corn comes in. Oh fresh corn how I love you right now. I cut it right off the cob and toss it into the pasta, raw. If you have never had raw corn, hold onto your britches. It is addicting! Crunchy, sweet, and irresistible! I have been keeping a jar of it in my fridge for salads, crostini topper, pastas; you name it, we use it!

To keep things simple, I used precooked chicken Italian sausage for a protein boost. The spices in the sausage is exactly what the pasta needed to balance out the velvety sauce and the crisp veggies.

With a pasta that is loaded with summer, there is no reason to not indulge in pasta during this heat!

    That charcoal door sounds amazing! We have a purple door in our neighborhood but it works. Ours = red. We should have gone charcoal! Also, I have everything for this pasta so it's definitely dinner tonight! Yay!

    I think the red/purple door thing was or maybe it still is a phase. Our door is a really dark purple and some of the other houses around have different shades of red. I totally agree with you on painting with more neutral colors, much easier to decorate! I could totally use an interior designer!! I am not very good at decorating. I love this mac and cheese and how it is actually good for you! I love so many of your recipes because of all the fresh ingredients you use!!

    I am right with you when it comes to decor. I like modern classic with all neutral colors and a pop of something bright and fun as an accent here and there. I also don't get pasta cravings that often. I find they are just so heavy and the portions most people give you are way more than I can handle. I love how you lightened everything up here though, definitely something I can see myself eating.

    What a scrumptious looking pasta! I kinda want a new couch too. Now that there are 4 of us in the house, I would like one of those L-shaped so we could fit a few more people. :)

    Agh my best friend's grandma is obsessed with purple too. She even has purple carpet....its quite a sight to see (to say the least). I am a neutral girl too ;-) Love this lightened up mac n cheese! And such pretty photos as always! Pinned!
