My family is headed to Wisconsin today, and to be honest, I probably should too!

But life is rather hectic right now. It’s wedding season, hence why my family is headed north, and I have three showers to attend this weekend. Goodness! July 11th is a popular weekend, eh?

With such a busy weekend, we decided to stay back. You mean I don’t have to sit in a car for 9 hours while being 5 1/5 months pregnant? I’ll take it.

But thoughts of Wisconsin instantly take me back to when I was little. My mom, Nana and aunt took my brother and 4 cousins up there for a little summer vacation. My dad was born in Janesville and my Nana grew up there. Actually, much of our family still lives there. Running a farm and golf course!

So on our trip, we got to experience the life of a farmer and realized I don’t really care for pigs. Nothing against them (um, bacon?) but the actually animal I am okay without. We also decided to play hide and go seek one afternoon. There was ample amount of land to play on so it seemed necessary to burn off some built up energy. Well my youngest cousin, probably 2 or 3 at the time, decided hiding in the corn field was a great spot. And let me tell you, it was. We couldn’t find him. For a good 30 minutes. Let’s just say, my aunt, mom and Nana hid their fear pretty darn well. This was a gigantic corn field and the horror stories of people getting lost for far too long was becoming too real to them.

We shouted to him that the game was over, you win! Anything to get that child to give up, but he was determined to not be found. It wasn’t until we formed a straight line of people and started walking up each row that we found him. Phew!

Never thought someone could have so many stories starring corn, did ya?!

Luckily nothing crazy has happened with corn lately, except my unusual consumption amount. Fresh corn is at it’s peak so I am devouring it in nearly any fashion to get my fill before it heads out for the season. While it is a BBQ staple to have grilled corn, I simply adore slicing it off the ear and throwing it into a salad, pasta or into this hummus! And yes, raw corn! It is incredibly sweet and super crunchy! Completely different than its cooked counterpart.

This hummus is our summer diet in a bowl. Fresh, minimal effort and the flavor is out of this world. I start with a simple batch of hummus. Nothing fancy as the toppings are where it’s at. Then fold in fresh corn and fresh basil. That’s it. Really!

Serve with fresh pita, pita chips, crackers, celery, carrots, whatever your little heart desires and go to town!

Ingredients

  • 2 cans garbanzo beans, drained, rinsed and deskinned
  • 1 tsp garlic powder
  • 1 tsp salt
  • 4 Tbsp olive oil
  • 2 Tbsp cold water
  • 1 ear of corn, kernels cut off
  • Handful of basil, thinly sliced

Instructions

  1. in a high powered blender or food processor add the chickpeas, garlic powder, salt, and olive oil. Blend. Slowly add water and continue to puree until it is creamy. You may need to add a bit more water if it is not coming together and creamy.
  2. Place in serving dish, and sprinkle with corn and basil.
  3. Serve with crackers and vegetables!

    Oh Wisconsin. I know it well, since that is where the hubs' fam is from! Too bad you can't attend! BUT then you can stay home and face plant into this goodness all weekend, because it looks AMAZING! Pinned!

    In a couple of weeks, a friend of mine is heading to Wisconsin for vacation! Her husband has family there so they are going to visit. Later this year, I think I will be traveling to Minnesota for vacation. My boyfriend's mom, stepdad and other family lives there. I've never been to a Midwest state and the first time I'll be going is in December. This Florida girl must be crazy to go into that cold weather! Too bad you can't attend the wedding this weekend but I'm sure you'll be much more comforatable at home and not having to ride in a car for 9 hours! Totally digging this hummus, Meg! I love the unique twist. I've never come across a hummus made with corn. YUM!

    I've also been eating a ton of corn lately, but I haven't tried it with hummus yet! I love how you took an ordinary hummus and turned it into something so fun and summery (is that a word?!).
