Hey it’s tapas time again!
Remember my obsession with these cute little guys? Well this version is my all time favorite. The beautiful sun dried tomatoes just scream fancy! I swear anytime I add them to a dish, whether salad or pasta, it becomes instantly fancy. I promise….so let me introduce you to a faux fancy appetizer.
My obsession with tapas style dinners has become redic. So, my constant raving became so ridiculous that I have gone out to dinner twice in one week to one of my favorite restaurants that serves an amazing array of bruschetta. Once with girlfriends the weekend my fiance was partying away in Chicago and this past weekend for our date night. I can’t get enough.
So it was only acceptable to whip up a batch of these beauties for an afternoon snack. Crispy, nutty whole grain baguettes are topped with a sweet fig jam. Where have figs been all my life? They are intensely sweet. So the tangy, creamy goat cheese offsets the sweetness wonderfully. Can I talk a moment about the absurd consumption of goat cheese that goes on in our house? Like its borderline addiction. We buy it at CostCo because if not, I would be heading off to the grocery store every other day. And may I add, by ‘our house’ , I mean ‘by my fiance’. Ya, addiction.
So back to the bruschetta; I finish them off with the fancy star. The oil packed sun dried tomatoes offer a flavor punch and are a tad salty touch. A match made in heaven with the sweet fig jam and tangy, creamy goat cheese. If you end up wanting to share these with friends, (so considerate of you!), they can be prepared in advance and they hold wonderfully!
I am secretly hoping the fiance will go party away with the boys again soon so I can make my favorite bruschetta and thoroughly enjoy it all by myself…

Yields 12
Ingredients
- 12 slices, 1/2" thick, baguette
- 1/2 cup fig jam
- 6 oz goat cheese, softened
- 12 sun dried tomatoes, packed in oil
Instructions
- Take baguette slices and spray with olive oil. Place on foil lined baking dish and place in oven to crisp up. Once crisp on one side, flip and crisp on other. Keep an eye on them so they do not burn! They go quick!
- Spread each baguette with a little over a tablespoon fig jam.
- Next, spread 1/2 oz goat cheese on each. Top each with sun dried tomato.
