A quick, 4 ingredient appetizer! Raspberry and Whipped Honey Goat Cheese Bruschetta is sweet, savory and crunchy all in one bite!
Last week, I could hardly contain myself. As in, I was giddy for a week!
Why you ask? It was by far my favorite weekend of the entire summer. Fourth of July!
If you live in the midwest, or close to a lake, you know my excitement around holidays that center around warm weather. My whole family headed to our lake house for an exteneded weekend. Over the past couple of years, it has been rare for my brother, his wife and girls, my husband and my parents to all be at our lake house all together. And this past weekend, made our second time getting together this year. What can I say, a full house just fills me with excitement! My mother and I actually came down Wednesday of last week, as we both were dying for a little get away. I felt like taking a few days away from the hustle and bustle of the city is good for my soul right now. I live for the weekends of serenity with my family. No drama, minimal work (if any!) and lots of good food. Usually there are some chilly beverages tossed in, but don’t worry, my mocktails are competing with those tasty margs!

Even though the big holiday has passed, delicious food is mandatory during the summer when a BBQ is calling your name. But nothing too complicated. Because no one’s got time for that. Rather a simple, no baking required appetizer that takes minutes to throw together, portions can be made ahead of time and not to mention, requires only 4 ingredients!
Bruschetta has been a weakness of ours for quite some time. Everything from tomato basil, to strawberry avocado to butternut squash and prosciutto (fall favorite!). They are simple to make and you can customize them to whatever suits your fancy.
The base is a a whole grain baguette as I love the nuttiness but use whatever type of baguette you like. Just be sure to use one that is steardy enough to be toasted and won’t fall apart when you layer on the good stuff! Then a good schmear of honey goat cheese is slathered on. I added honey and goat cheese to a food processor and let it go until it becomes nice and fluffy. An air like texture that is cloud like. So good that I may or may not have had a few spoonfuls…
And the topper? A tart, fresh raspberry jam. You could skip a step here and use your favorite raspberry jam but this two ingredient jam couldn’t be any easier. Simply add frozen raspberries and honey to a sauce pan then let boil and reduce. Too easy not to do! And I use frozen raspberries as they are frozen at their peak and the flavor is always on point. Plus the juices released when heated helps the jam come together. But if you have a bunch of fresh raspberries, go for it!
Now you can’t say you didn’t have time to make something homemade!

Yields 4
Ingredients
- 16 ounces frozen or fresh raspberries
- 1/4 cup honey, divided
- 1 cup goat cheese
- 8 thick slices of whole grain bread, toasted and halved
Instructions
- In a small sauce pan, combine the strawberries and 2 tablespoons of honey. Bring to a boil and reduce heat to a simmer. Let simmer for 5 minutes or until mixture starts to thicken. Let reduce till thick.
- Meanwhile, in a food processor, combine the goat cheese and 2 remaining 2 tablespoons honey. Process until smooth and it becomes whipped.
- To serve, spread the goat cheese onto the toast. Top with the raspberry jam and serve immediately.
Notes
*The jam and goat cheese can be made ahead of time and stored in an air tight container in the fridge until ready to use.
