Today I bringing my A game.

As in a bacon + beer + cheese + a bit of spice + a gooey dip = complete udder bliss.

As I see it, you would think that my thoughts on the Super Bowl are pretty minimal.

BUT. As the years have moved along, my love for times huddled on our couch awaiting kickoff, has grown. Never mind the fact that the snacks may play more of a role than the actual action happening on the screen. That’s minor, really.

So naturally the Big Game is the Thanksgiving for wings, all things buffalo and dips! And beer. Can’t forget the a beverage. And it’s also the time to bring that delicious bar food we all love, home. Forget the crowded bars, the slow serving times and the guy next to you that swears the players can hear him through the TV.

That last one may still happen at home. Choose your invitees carefully.

With the the Big Game approaching I have been getting my snack game on. Last year, we snacked on slow cooker honey teriyaki chicken wings, buffalo chicken stuffed potato skins and a skinny queso dip. This year I am coming to the party with a fully loaded, 4 ingredient, Sriracha Bacon Beer Cheese Dip.

This dip is quite delicious. A twist on the classic cheese dip. A spicy twist. A beer spiked twist. As in everything we all love about tailgating got together. And yup. We all know the end to that. An upgraded dip is the perfect way to set up your ‘homegate’! When you are throwing a party, it is essential to incorporate tasty yet easy recipes! And let me mention, it is completely acceptable to buy store bought favorites while making a few of your top picks. That tip alone helps me save my sanity!

This dip comes together in about 10 minutes. Can’t beat that! I simmer Budweiser® Bud Light Lime in a skillet until bubbly, then add low fat, cubed cream cheese and whisk until smooth. Lastly, in goes the freshly shredded cheddar cheese. Please promise me you will use freshly grated cheese? It takes only a minute more to shred but the flavor and creaminess over preshredded is incomparable!

And since it’s the big football game of the year, let’s go big on this dip! Not only is it a showstopper, the flavor is out of this world. Sweet. Velvety. Spicy and so cheesy! And go crazy with the toppings. More is better here, folks. I chose crispy bacon, fresh tomatoes and sliced green onions. And lastly, serve individual bowls of dip to your guests in Old El Paso™ Stand N’ Stuff soft flour tortillas that I picked up at Walmart. Everyone loves the ability to customize, so set up a scape of the dip and toppings, and let everyone go to town!

Lastly, this dip would be great kept warm in a slow cooker so everyone can dip all game long!

Ingredients

  • Dip:
  • 8 ounces low fat cream cheese
  • 6 ounces Bud Light Lime Beer
  • 6 ounces freshly shredded cheddar cheese
  • 1 1/2 teaspoons Sriracha
  • Optional Garnishes:
  • Cooked Bacon, crumbled
  • Sliced Green Onions
  • Cilantro
  • Diced Cherry Tomatoes
  • Serve with tortilla chips, pretzels

Instructions

  1. Add beer to pan. Bring to a simmer. Add cream cheese. and stir until smooth and creamy. Slowly add shredded cheese. Stir until creamy.
  2. Garnish with toppings and serve immediately.

    I really look forward to the Super Bowl, too - and yes, not just for the game itself! It's another excuse for festivities and food with the family!     You had me at Beer bacon and Cheese! You are so right about going to a sports bar vs staying at home. Where home may or may not be just as loud... you can have all the food you want instantly. And the food is the star of day for sure! You can bet that we are going to try this dip out. it looks DELISH!

      Hi Anitra, it is to make it a tad bit lighter on calories than traditional cream cheese but still bringing the same flavor. But if you wish to use full fat, go right ahead!

    This sounds like an awesome recipe. I haven't tried it yet, but have been on a spicy craze lately. Would you recommend a Sriracha with a little more heat like Texas Pete's Hot and Bold Sriracha or not? If no, what could you recommend to add some extra kick? Look forward to trying it!

      I would say use whichever hot sauce you enjoy eating, so whether that is one with more heat or not. And you can always add more than I have listed! Enjoy!
