Um, hello. It’s only three weeks into the New Year and you are already throwing desserts around?!
Well, the thing is, I can never break up with my beloved sweets. Where is the fun in that? And since having Aiden, it seems my nightly sugar cravings have kicked themselves into high gear. I am looking at you, Caramel Delight pint of ice cream.
So what is a mama to do?! Listen, duh.
Last time we chatted, we talked about my word of the year. Positivity. Rather than setting a New Year’s resolution, I want to focus on bringing out a sustainable change. Along with keeping a positive mindset and letting go of the negative, I am keeping sweets in life by making life sweeter with less. Let me explain.
While I am trying to focus on more mental changes this year, it means focusing on less. Less stress. Less worries. Less concern about the physical things in life, while concentrating on the smaller, untouchable things – such as spending those irreplaceable moments of firsts with my little guy. Like his first giggle. First time to roll over. First time to figure out he can use those little legs for more than just wiggling around! Not only am I focusing on less in my day-to-day life, I am focusing on life with less in terms of our kitchen. We are trying to focus more on wholesome ingredients, such as more vegetable filled dinners. While our diet is pretty darn healthy already, trying to find little ways to improve it is never a bad thing. And this is where chocolate entered the mix. And oh so satisfying, healthy flourless brownies.
I can’t say enough good things about this no flour brownies recipe. They are a mix between rich fudge and fluffy brownies. Plus they are flourless (hey, gluten free friends!), have a bit of butter and coconut oil to keep them moist, a few eggs to bind, Truvia Brown Sugar Blend and an added bonus? Vanilla almond butter. Heck, I would eat almond butter on just about anything as long as I get my beloved almond butter.
It is not a secret that I love baking and cooking with Truvia. It fits perfectly into my year of life with less. I am able to reduce the sugar in this recipe yet still deliver brownies that are sweet enough for even my sweet tooth! It is a natural, stevia based sweetener that bakes just like regular sugar, making it the ideal way to lighten up your favorite dishes and keep those New Year’s resolutions in check! Ingredients
- 1/4 cup coconut oil
- 1/4 cup butter
- 2 cups semi sweet chocolate chips
- 1/2 cup vanilla almond butter (or peanut butter if you prefer)
- 4 eggs
- 1/4 cup Truvia Brown Sugar Baking Blend
- 1/2 cup unsweetened cocoa powder
- 1 tablespoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350 degrees F. Line an 8x8 inch baking dish with parchment paper and spray with nonstick cooking spray. Set aside.
- In a medium size microwave safe bowl, add the coconut oil, butter, chocolate chips, and vanilla almond butter in a microwave safe bowl. Microwave at 50% power for 2 minutes. Stir until smooth. If not completely melted and smooth, return to microwave for 20 seconds intervals until melted and smooth.
- Once the chocolate mixture is melted, add the eggs, brown sugar, cocoa powder, vanilla extract and salt. Mix until combined. Pour into the prepared baking dish.
- Place in preheated oven and bake for 30 to 35 minutes, or until brownies are just set. Try not to overbake these as they taste best slightly gooey!
- Cut bars into 16 squares and enjoy!
