{Greek Yogurt} Pepperjack & Caramelized Onion Dip is an upgrade to the classic dip with spicy pepperjack cheese and made skinny with a greek yogurt base!
It is a rude awakening when you realize there are no more days lounging beach side, a diet filled with guacamole and tortilla chips, and endless margaritas to thirst my quench. While Mexico last week was glorious with some much needed R&R, it is wonderful to get back to my routine.
I am creature of habit and sometimes vacations can really test my ability to relax!
Such a tough life. I know.
When we woke up on Saturday morning in the wee hours, we were all sporting our brightly colored garments, only hoping to toss our heavy coats aside in about 12 hours once our plane landed in warm and sunny, Huatulco, Mexico. Well apparently the universe had other plans. Just as I told a friend that my hubby and I had never had issues traveling, our plane that just started to back up, headed back into our gate. No, this is not right! Over the intercom, the stewdardess said there was a ‘demonstration’ going on in Huatulco’s airport.
Um, what?
Apparently ‘demonstration’ is code for teacher strike and the start of next 24 hours of traveling disaster. Our dreams of sipping margaritas with my feet in the sand that afternoon started to slip through our fingers in a hot minute when they announced our flight was cancelled.
The next few hours, we scrambled to find another flight, a hotel room to perch up for the night and then a bar to drink our sorrows away. Despite not arriving in Mexico, we ordered a round of margaritas, salty tortilla chips, the start of our love affair with guacamole and pico de gallo.
Over the next seven days, my diet was filled with copious amounts of guacamole with a far too many visits with of my friend Jose. But when in Mexico!
After a week of soaking up the sun and some much needed family time, I feel rather rejuvenated but finding it harder to get back into work mode than I thought. That whole ‘you will come back ready to knock it!’ is not exactly true…rather than hitting the pave running, I am more like dipping my toe into the pool to test out the waters. Don’t want to shock my body here or anything.
Upon returning to the normal life without endless sugary frozen drinks, all I can concentrate on is the big game coming up! Yesterday, I made you some Buffalo Chicken Stuffed Potato Skins with Honey Blue Cheese Sauce as they are healthier so you won’t feel guilty when you eat one too many. And today’s dip is no different. With a base of greek yogurt and only a minimal amount of cream cheese, there is zero guilt here!
What is it about caramelized onion that makes me swoon? They are like diamonds. You can never have enough. Their slightly sweet flavor pairs perfectly with the spicy pepperjack cheese that is piled on top and then melted. This dip is perfect for the big game coming up as you can prep the filling ahead of time, then when ready to devour, just pile on the cheese and broil until all melty and bubbly.
A tip…serve with roasted root vegetable chips. I mean veggies + greek yogurt is a healthy snack if you were to ask me.

Ingredients
- 1 tbsp olive oil
- 2 large yellow onions, very thinly sliced
- 2 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp cayenne pepper
- 1 tsp salt
- 1 tsp pepper
- 2 cups plain greek yogurt
- 4 ounces low fat cream cheese, softened
- 1 cup low fat pepperjack cheese
- To serve, vegetable chips
Instructions
- Heat olive oil over medium heat in a large skillet. Add the sliced onions, garlic powder, onion powder, cayenne, salt and pepper. Sauté for 10 minutes, stirring occasionally until onions are soft.
- Reduce heat to medium low and sauté for 25 minutes minutes, stirring occasionally, until onions are brown and caramelized.
- Meanwhile, stir together the greek yogurt and the cream cheese. Mix until smooth. Add the onions once cooked.
- Add to a small oven safe baking dish (an 8x8 or small ceramic dish is perfect), then sprinkle with pepperjack cheese.
- Place under broil for 5 – 10 minutes, or until cheese is melted and bubbly.
- Serve immediately with vegetable chips.
