When my parents came back from visiting Europe, they gushed all about how they started their days with thee best cappuccinos with a side of flakey, luscious croissants. And why not add a schemer of chocolate hazelnut spread while you are at it? Sadness rushed over me as I started my mornings with a toasted english muffin and good schemer of peanut butter.

Although I have a special place in my heart for peanut butter, sometimes I crave an indulgent breakfast. Much like my craving for brunch with mimosas, I often don’t get to indulge unless I put quite a bit of effort into my morning meal. Which is extremely unlikely when you wake up starving at 6am.

Let’s not talk about how ravishing this babe is in the morning. Takes his love of breakfast after his mama…

So last week when another carb craving kicked up, I indulged and headed to the kitchen. Yes it was well past breakfast time, but I am no rule follower and adore breakfast anytime of the day. I morphed my blueberry coconut coffee cake bars and baked them into muffins. Instantly a good idea.

Sweet and tender, these Skinny Raspberry Coffee Cake Muffins with Almond Streusel are secretly healthy and bursting with flavor! Something worth getting up for each morning!

Tender coconut flour makes these muffins super light and fluffy, but won’t weigh you down. Another aspect? They aren’t loaded down with sugar  and butter. Rather maple syrup and coffee spiked milk, International Delight Vanilla Iced Coffee. Because we all know coffee is a must with coffee cake.

And we can’t ignore the streusel because everyone knows that the sugar crumbly topping is the best part. No ordinary topping though. I lightened it up with stevia brown sugar, sliced almonds and cinnamon. Adding a layer in the middle, along with coating the top of the muffins ensures each mouthful is filled with the brown sugar almond goodness.

Ingredients

  • Muffins:
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 3 liquid egg whites
  • 1/3 cup almond milk
  • 1/2 cup maple syrup
  • 1 cup raspberries
  • Almond Streusel:
  • 1/4 cup Truvia brown sugar
  • 1/4 cup sliced almonds
  • 1 teaspoon ground cinnamon

Instructions

  1. Muffins:
  2. Preheat the oven to 350 degrees F.
  3. Combine all the dry ingredients in a blender or by hand. Blend well.
  4. Add the wet ingredients to the dry ingredients and blend well to get rid of any lumps, Or blend well by hand.
  5. Almond Streusel:
  6. In a small bowl, combine the brown sugar, almonds and cinnamon.
  7. Grease 9 muffins tins well or add muffin liners; add half the batter to each of 9 muffin tins. Sprinkle half of the almond streusel on the batter. Sprinkle each muffin with the raspberries. Pour the remaining batter on top. Then finish by sprinkling with the remaining streusel.
  8. Place in preheated oven and bake for 25 - 27 minutes, or until a toothpick inserted comes out clean.
  9. Remove from oven and let cool on a cooling rack.
  10. Store in an air tight container, in the refrigerator.

    Hi Meg! I've tried a few of your muffin recipes and loved them all so far. I had a question about the coconut flour. Do you think I could substitute either almond flour, oat flour or white whole wheat flour? Thank you from a new reader and avid baker. :) Happy Friday!

      Hi Jessica! Oh you have made my morning! And I highly suggest against substituting another flour for coconut as it is extremely absorbent so if you do use another flour, you will need more flour or less liquid. If you are a fantastic baker, go for it! I am not so I like to stay within my comfort zone ;) Hope you enjoy them!

    I am definitely a breakfast person too and I could eat it anytime of the day! My kids are big breakfast eaters as well so I try to make breakfast really healthy. So, these muffins will be AWESOME to add to our mornings! One question- did you put raspberries in the batter? If so how much? Thanks!
