Grilled food galore. Grilled food all the time! But I don’t see you complaining as we all loved the grilled vegetable and quinoa salad on Monday so I thought we should round out that meal with a dish that will take up the other side of the barbie. See how that works out?
Dinner made easy.
These kabobs (or skewers…) are the epitome of summer. How much more summery can you get than grilled shrimp? They are lean, healthy and sweet. Plus I could eat two pounds to myself and not be full. Well, maybe now that the babes is starting to take over that area…but that is besides the point. My eyes are bigger than my stomach these days. But don’t think I don’t try!
Shrimp. I want to consume it in nearly any fashion and these kabobs luckily grill up in no time and are slathered and dunked into a dip that I want to drink on its on. Honey, lime and chile powder. It hits every taste bud and they will be asking for more for all summer long.

Yields 4
Ingredients
- Shrimp:
- 1 lb shrimp, peeled (I used 21-25)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon garlic powder
- Honey Lime Sauce:
- 1 tablespoon olive oil
- 3 heaping tablespoons honey
- Juice of 2 large limes
- Zest of 1 lime
- 1/2 teaspoon chile powder
- 1/2 cup packed cilantro, diced
Instructions
- Shrimp:
- Preheat grill or grill pan to medium. If using grill pan, make sure to spray with non–stick spray.
- Thread shrimp onto skewer.
- Combine salt, pepper and garlic powder and sprinkle over shrimp.
- Honey Lime Sauce:
- In a small bowl, whisk together the olive oil, honey, lime juice, zest, and chile powder. Remove 2 tablespoons of the sauce and brush the shrimp with it. Reserve the other half for serving.
- Grill shrimp for 3-4 minutes on each side, or until they turn slightly pink.
- Remove from heat and sprinkle with cilantro. Serve immediately with reserved honey lime sauce.
