You know that train everyone its hitching a ride on?
Ya, the avocado toast train? Well, I think I have a recipe to rival that train.
Guacamole toast.
A couple weeks ago, I professed my love to avocado toast by jazzing it up with juicy tomatoes, creamy mozzarella, fresh basil and balsamic vinegar. It has been my go-to snack in those few moments I can hide in the bathroom for some peace and quiet. Possibly one meal that isn’t ice cold or a touch soggy?
During one of the many trips to Panera for some good ol people watching while attempting to work, I spied a tasty sandwich. Their Mediterranean Veggie Sandwich. It is what summer dreams are made of. Fresh veggies to fuel my afternoon, rather than a meal that makes me want to jump back in bed. Yes, I am looking at you twice baked potato soup in a bread bowl. You are addicting yes, but you do nothing for motivation.
Panera’s veggie sandwiched is stuffed with farmer market veggies galore. It makes the dog days of summer feel not as hot, as I chowed down on a fresh sandwich that required no cooking. With each bite, I was already thinking of how I must recreate this beauty at home. And that next day, I did just that.
My version is filled with crisp cucumbers, lettuce, vine-ripened tomatoes, red onions, salty feta and Sabra’s Guacamole Veggie Fusions. Guacamole made with real, crispy vegetables, 7 different varieties to be exact and coming in at 30% less fat than classic guacamole. It only seemed natural to go with the Garden Vegetable, which is filled with Hass avocados, onions, carrot, tomatoes, red bell peppers, yellow squash, jalapeño pepper, basil, and a touch of lime juice. This veggie spread is a ‘farm to table’ experience that even the pickiest eaters will be digging into!
This Mediterranean Avocado Toast is tasty and hearty enough that I fooled my meat loving husband. Filled with healthy carbs, fat, and protein, you just may leave enough room for dessert. Now I call that a win.

Ingredients
- 2 thick, whole grain bread slices (gluten-free, if needed)
- 1/4 cup Sabra Garden Veggie Guacamole
- 8 thin slices cucumber
- 4 thin slices tomato
- 4 thin slices red onion
- 2 tablespoons crumbled feta
Instructions
- Toast bread slices.
- Top with guacamole, cucumber, tomato, red onion and feta.
- Enjoy immediately!
