Somewhere along the road, I thought desserts required silky ice cream, gooey chocolate and peanut butter for good measure. Completely indulgent. Because if we are having dessert, why not go big?

Growing up, every birthday was accompanied by Mexican food then wrapped up with a ginormous, bright pink frosted cookie cake that was topped with loads of vanilla bean ice cream. Oh and presents. Because duh.

Sometime during last summer when I was pregnant and the babe despised any form of dessert (like my beloved ice cream), I had to great creative with my evening sugar fill. Desperate times call for desperate measures. One craving I had was all things fruit. Watermelon, strawberries, blueberries, raspberries. Pick any fruit down the fruit aisle and I consumed the entire container in a mere 24 hours. That is when the lightbulb went off in my head…fruit for dessert. Pure genius.

This Vanilla Triple Berry Crisp takes the best of summer crops and makes them even better. The thought of making the already sweet strawberries even better seemed hard to do; but I managed to do it. Berries and fresh vanilla beans. Vanilla isn’t only reserved for batches of cookies. I add it to nearly everything in my kitchen. Like pancakes! It adds a level of sweetness without adding any additional sugar. Always a win in my books.

The base for this fresh berry crisp  is a mix of a vanilla and a few summer favorites, strawberries, raspberries, and blueberries. But in all reality, feel free to use whichever fruit combination that floats your boat. A blackberry crisp or straight blueberry crisp would be all good in my wheel house! During the fall, I highly suggest an apple crisp with huge spoonfuls of vanilla bean ice cream atop! The endless possibilities are up to your imagination.

It is gluten free if you swap out gluten free oats, and is naturally vegan as there no need for eggs or dairy. Winning for me due to my sensitivities!

Now, a crisp wouldn’t be complete without a crunchy, nutty and slightly sugary crumble topping. I mixed old fashioned oats with a good palmful of ground cinnamon, coconut oil (don’t worry there is no coconut flavor), coconut sugar, chopped pecans and salt. That’s it. Nothing too complicated but the simplicity shines through. I used chopped pecans but feel free to use almonds, cashews or walnuts if those suit your fancy! Orrrrr, if you have a nut allergy, simply leave out. This healthy berry crisp will stil rock your world!

One thing I love about this Gluten Free Vanilla Triple Berry Crisp is how healthy it is. I mean, look at those ingredients. Berries, oats, a touch of sugar, oil and chopped nuts! There is no reason to not enjoy more than your share. Or heck, even start your day with it!

So, who said you can’t have dessert for breakfast?

Ingredients

  • 4 heaping cups mixed berries (raspberries, blueberries & strawberries is what I used)
  • 1 vanilla bean pod or 1 tablespoon vanilla extract
  • 2 cups gluten free oatmeal
  • 1/2 cup chopped pecans
  • 1/3 cup coconut sugar
  • 1/3 cup melted coconut oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Score the vanilla pod down the center and scrape the seeds from the pod.
  3. In a medium bowl, combine the berries and vanilla bean seeds. Place the berry mixture in a 9 inch cast iron skillet or a 9x9 baking dish.
  4. In the small bowl, mix together the oatmeal, pecans, coconut sugar, coconut oil, cinnamon, and salt.
  5. Spread oat mixture evenly on top of berries.
  6. Place skillet into the preheated oven. Bake for 45 minutes, or until berries are bubbling and oat mixture is golden brown.

    I so wish my birthdays were full of Mexican food growing up! I love chocolate a lot so I don't know if this could replace it, but I would have no issues eating this to myself!!!
