I love God’s way of gently reminding me what really matters in life.
It is not my ability to check off my never ending ‘to-do’ list. It is not the newest pair of shoes I bought to match that dress perfectly.
It is spending our Saturday at a fundraiser for a good family friends little boy that has cancer. It is making them meals and treats each week to make their life at home a bit easier, despite their up’s and downs of day to day life.
Seeing something as this shake a family so close to home really puts things into perspective. Life is short. And not guaranteed. A reminder to not overlook the joy in the small moments of life. Watching my son experience birds chirping for the first time. Hearing the engine roar as we start our boat for his first boat ride. Seeing the pride in his face as he shoots me a little grin when he pulls himself up on the stairs. A reminder to not overlook the joys as my son experiences life for the first time.
I never imagined the happiness a little one could bring. You hear everyone say much love and joy children bring into a parent’s life, but I never imagined someone so small could take up so much room in my heart. My heart was already full when he was born, but it just keeps growing with each passing day.
In efforts to make my life easier so I have more time for those little moments, effortless and nutritious snacks are essential. And should I mention it doesn’t require an oven or stove? Essential for when the heat really turns up here in the midwest.
Avocado toast is not a new kid to snack game but adding variety to it is. Another joy and spice of life, if you will. There are couple key components to creating a beautiful avocado toast. First is the base. The bread. The carbs! I am rather picky with my choice of breads. They must be whole grain, full of nutrition and a seeded variety gets brownie points! So when Pepperidge Farm® Harvest Blends bread debuted their line of whole grain breads, I jumped on board. They are filled with better for you grains, such as sunflower seeds, flax and sesame seeds. What surprised me the most was how fluffy the bread was, and remained upon toasting. I find so many whole grain breads become smushed or flat too quickly. Harvest Blends is the perfect base with its crunch and nuttiness for the creamy avocado that I load on top!
The avocado is obviously a key component to this snack. You can mash it up or keep it in slivers; like I have done here. Whichever suits your fancy! Once you have those two parts nailed down, the fun with the toppings begin! Since my herbs in our backyard have really taken off, I have been finding ways to incorporate basil into nearly every dish. No complaints here. I am a basil feen!
A bit of basil, dreamy and creamy mozzarella then all drizzled with a heavy hand of balsamic drizzle makes this Caprese Avocado Toast hard to turn down.
Just as I try to not pass on the little joys in life, I definitely don’t pass on the joys of delicious snacking!

Ingredients
- 4 slices Pepperidge Farm Seeded Bread
- 1 avocado, thinly sliced
- 1/2 cup cherry tomatoes, sliced in half
- 1/2 cup mini mozzarella pearls (or sliced mozzarella)
- 1/4 cup basil leaves
- Balsamic Glaze, for drizzling
Instructions
- Toast bread until golden brown.
- Layer toast with avocado, cherry tomatoes, mozzarella, basil and drizzle with balsamic glaze before serving.
