I fully believe kale has frozen over. I mean h*ll.

Dustin has started eating greek yogurt for lunch.

Along with asking for kale salads.

WITH fruit.

This Bacon & Berry Kale Salad with Honey Lemon Vinaigrette is a summertime superfood salad! Fresh kale tossed in a honey lemon vinaigrette and topped with fresh berries, creamy avocado, and crispy bacon!

So once upon a time I was determined to trick Dustin into actually liking kale. Just not eating because I shoved it in front of him but actually ask for seconds. You see, this is how it went down.

You start with a manly salad. A BBQ salad because we all know BBQ is it’s own food group in his world. Then you add a sweet and spicy seasoned hunk of salmon. Another check on his ‘obsessed’ list. Combine the two and watch the boys start running! And just forget to mention the whole kale thing….

The fruit in this salad are by far what make this salad! Juicy, sweet, and slightly tart berries.  This the one time that less is not more! So feel free to add more than what is called for. I won't tell...

As I sat in awe, as Dustin took bite, after bite, I started to realize he actually likes kale! So the key to all this? Disguise kale underneath all other goodies. Duh.

On my quest to find yet another salad that Dustin would ask seconds for, I made a knock off of my favorite Panera’s salad and morphed it into this deliciousness. But I added bacon. Well, who could say no to bacon?

One other thing. Kale MUST be treated with care. As in massaging and marinating it before devouring. I learned that one the hard way. Massaging it removes the bitterness and softens the leaves up. Rather than just massaging it in olive oil, I went with a light, citrusy vinaigrette! A touch of honey sweetens up the deal. I love the idea of massaging the kale because you can actually do it up to a day before enjoying. Winning!

With the citrus vinaigrette, the fruit really pops! I just can’t deny the abundance of gorgeous fruit at the store right now. And my bank account finally is not crying for spending a small fortune on a small container of raspberries.

Ingredients

  • Honey Lemon Vinaigrette:
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Salad:
  • 6 cups chopped kale
  • 2 cups sliced strawberries
  • 2 cups raspberries
  • 1/2 pound cooked turkey bacon (or regular bacon)
  • 2 small avocados, halved, pit removed, then sliced

Instructions

  1. Honey Lemon Vinaigrette: In a small blender or food processor, combine the ingredients for the vinaigrette: oil, vinegar, lemon juice, honey, salt, and pepper. Set aside.
  2. Salad: In a large mixing bowl, combine the kale with the dressing. Massage the kale to soften.
  3. Add the strawberries, raspberries, and bacon. Cover and refrigerate until ready to serve.
  4. When ready to serve, top with sliced avocado.

Notes

*Salad will hold for about 24 hours in the fridge.
*Feel free to add grilled chicken to this salad! It makes the perfect lunch!

    YES Dustin has converted to the kale side! Really, it's a great place to be. Plus, the Just Add Bacon situation goes a looooong way when it comes to kale! I'm loving this super fresh man-friendly salad. I know beyond the shadow of a doubt, my meat-loving bf would be all over it! Beautiful!

    There is absolutely NO chance in the world that my fiancé would ever touch kale in this lifetime, so kudos to you!! Haha. This salad looks so fresh and delicious! He does love salad though so I am totally making that honey lemon vinaigrette ASAP!

    You really know how to get your kids to eat their veggies, don't you? You are a mom genius! I'm not a huge fan of kale myself, but it was presented in this salad you're darn sure that I'm gonna lick my plate clean! YUM!
