Hummus has been my jam lately.  My latest obsession if you will.

You see, I get rather fixated on things before I find a new favorite and leave the once loved item on the curb side like a rag doll. For instance, Chick Fil A Diet Lemonade. As in fresh squeezed, skinny lemonade. Way to my heart. Then came along this Skinny Watermelon Limeade and diet lemonade all of a sudden seemed so plain jane. #TheStuggleisReal

So when I made this Honey Sriracha Hummus a couple of months, it instantly became a repeat in our house. As in, I wasn’t the only one devouring it. My husband became obsessed too. He was eating it with everything possible. With veggie chips for a snack. Smeared on this turkey sandwiches for lunch. On a tortilla for dinner. However he could incorporate it into a meal, he did it.

When we decided to grill chicken one night, I knew the hummus would be joining as it was my husbands BFF at the time. And not to mention, it really vamps up a grilled chicken sandwich in no time.  And let’s talk about how simple this sandwich is to make. Besides the salt, pepper and Italian seasoning (I like to think of those as pantry staples or freebies), you have 5 components. The hummus is a component all on its own, but once you make it, store in the fridge then whip up these sandwiches. Dinner made easy!

So back to the sandwich. 5 Ingredients. Talk about easy. Chicken. Provolone. Lettuce. Hummus. And whole wheat slider buns. Stupid easy, see?  But feel free to use what ever burger buns you have, just making sure your chicken breasts fit. Or it may be a little odd trying to eat them. I will trust that you can make the call…

We love to grill the chicken, but if you don’t have access to a grill, you can bake them, pan fry or even use a George Forman! Remember those? I feel like they were popular for a hot minute. A long hot minute, but hot minute nonetheless.  While the chicken is cooking, toast your buns. Nice and toasty. Just on the stove top, toaster or oven! All of the above will do. Then once the chicken is almost done, throw on a piece of buttery provolone to melt. And to finish em up, slather the hummus on to the toasted buns and you are good to go.

Quick. Harmless. Sweet. Spicy. And your next fixation!

Ingredients

  • 1 pound lean chicken breasts, preferably 4 smaller breasts or pieces.
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper
  • 1 1/2 teaspoons Italian seasoning
  • To serve:
  • 8 (1/2 oz each) slices provolone
  • Romaine lettuce leaves
  • 1/2 cup Honey Sriracha Hummus
  • 8 whole wheat slider buns or whole wheat dinner rolls

Instructions

  1. Preheat grill or oven to 350 degrees F.
  2. Season chicken with salt, pepper and Italian seasoning. Cook chicken on grill or in oven for 15-20 minutes, or until internal temperature reaches 165 degrees and the juices are clear. (This depends on how large your chicken breasts are; if you have small pieces of chicken your cooking time will be shorter. And longer if you have large chicken breasts.)
  3. Meanwhile, slice your mozzarella into 8 (1/2 ounce) thin slices.
  4. When chicken is done cooking, cut breasts in half so you have 8 small pieces of chicken.
  5. Add 1 tablespoon of hummus onto the bottom of each bun. Place chicken on top, top with mozzarella, lettuce leaves and top of bun.
  6. Serve immediately.

    Oh goodness!!! Just what I needed at 9 am!! LOVE THESE! I am the same way - I eat something for a couple of months, almost daily, and then forget about it as soon as I find something more amazing. I do the same with clothes!

    I so want one of those right now! I am obsessed with sriracha...I love a little kick to my food. And hummus...well we go through a lot of that here. I think these would be a big favorite!
