Hi all!
How was your weekend? Did you have an enjoyable and refreshing Easter? I did for sure! I relaxed, stepped away from the blog (as I mentioned on Friday, I have been doing more of!) and spent much needed time with my husband and family! On Saturday, Mr HIT and I ventured out to Nebraska Furniture Mart to pick out new appliances for our new house! Talk about a dream come true. But also terrifying for the wallet. Not a cheap purchase in any form but hey, we will be using these appliances for the next 10 to 15 years so we think of them as a good investment. Plus with me cooking full time for this here blog, we think they are necessary 😉 So I must ask, anyone have any suggestions on appliances they think are a must? We have picked out a few, but I am always open to suggestions!
After this weekend, I feel refreshed, renew and relaxed! So relaxed actually that I spaced completely on writing a post for yesterday. Whomp whomp 🙁 But I am back today with a tasty recipe to welcome the warm weather that is hopefully gracing your neighborhood! While the warm weather has been teeter tottering here in KC, I am pretty happy that most days are around the 60’s. I can handle that!
On the weekends, dinners revolve around BBQ’s with friends that are all centered around the patio and citronella candles. The smell of the charcoal drifts throughout the house and greets you before I can even ask my friend which beverage they would like first. Dinners on the grill seem stress free which is a must during the warmer days. And these Raspberry Chipotle Mozzarella Sirloin Sliders will be a must for you next gathering.
Sweet and fiery raspberry chipotle is a homemade jelly that takes no time to throw together, hits every taste bud with its sweet notes of raspberries and honey and leaves them tingling with the jalapeño. I fell in love with this flavor combination when I first experienced an appetizer from my college town, KSU. So Long Saloon has an appetizer that is must get. Raspberry Chipotle Black Bean dip is a creamy, gooey, spicy and sweet addiction of cream cheese, a homemade spicy jelly and black beans that is served piping hot with tortilla chips. I could make it a meal if my jeans wouldn’t hate me the next day.
Rather than chowing down on a cream cheese filled dinner, I thought to make a healthy version, top a juicy, lean sirloin burger and finish it off with a gooey piece of mozzarella. There are far fewer meals that scream BBQ’s than burgers. And this burger has it alllllll goin on! By using lean sirloin, the flavor is juicy, and full of beefy flavor so it is my prime pick over ground beef when making burgers. Go with 92% or 94% lean and you will be good to go!
The raspberry chipotle can simmer away while you shape, prep and grill the burgers. Simply mix chopped jalapeño, chipotle in adobe, garlic, apple cider vinegar, fresh raspberries, honey and salt together in a small saucepan. The berries start to break down and release their juices. As it cooks, the liquid evaporates and will thicken up. Creating the ideal sauce to pair with the gooey mozzarella and sirloin burgers. Feel free to top with some greens. It will help step up the health factor a notch. Add some whole wheat buns and get ready to chow down.

Ingredients
- Sliders:
- 1 pound lean ground sirloin
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
- 1 teaspoon garlic powder
- [/b]Raspberry Chipotle Sauce:
- 1/2 jalapeno
- 1 chipotle in adobo
- 1 large garlic clove, minced
- 1 tablespoon apple cider vinegar
- 6 ounces fresh (or frozen) raspberries
- 4 tablespoons honey
- 1/4 teaspoon salt
- For serving:
- 4 slices cooked bacon, broken in half
- 4 ounces fresh mozzarella
- Arugula
- 8 whole wheat slider buns or whole wheat dinner rolls
Instructions
- In a small saucepan, add the ingredients for the Raspberry Chipotle sauce. Bring to a boil then reduce heat to a simmer and let simmer 10 to 15 minutes or until the juices from the raspberries release, start to break down and the sauce reduces by half. Set aside to let cool slightly but keep warm.
- In a bowl, add the sirloin, salt, pepper and garlic powder. Mix well. Shape into 8 slider buns. Grill or cook on a grill pan at 375 degrees until desired doneness, 5 – 10 minutes.
- To serve, place a burger patty on the bottom of each bun, top with mozzarella, raspberry chipotle sauce, bacon and arugula.
- Serve immediately.
