So let’s play a game. Let’s see how many chicken burgers I can eat in the few weeks before the wedding.
If you have known me for a hot minute, you know I use to loathe burgers. You see me and beef never really got along and to this day, we still aren’t besties. Flavorless, dry hockey pucks. No. Thank. You.
But since then, I have come around. Chicken burgers FTW. Lean chicken breast mixed with flavorful goodies and seared on the grill to achieve ideal grill marks have been a staple in our diet for many weeks now.
As every food blogger has done, I fell in love with Trader Joe’s Chile Lime Chicken Burgers and was determined to recreate them in my own kitchen. And all I can say is, I am blown away. Finely diced white onion provides the chicken moisture, while the red pepper, cilantro, garlic and lime give them a flavor boost.
And with flavors such as these, I couldn’t leave avocado out. The burgers were screaming for them. Truth. Simply mash avocado with salt, pepper and touch of cumin and you have an impromptu guac to marry perfectly with your burgers.
Feel free to load these puppies onto your favorite burger bun or eat with lettuce leaves, as we have done. Both are totally acceptable.

Yields 6
Ingredients
- 2 lbs lean ground chicken
- 1/4 cup finely diced white onion
- 1/4 cup finely diced red bell pepper
- 1/4 cup finely diced cilantro
- 4 garlic cloves, minced
- 2 tsp crushed red pepper flakes
- 1 tsp salt
- 1 tsp pepper
- Zest of 1 lime
- *Guac:
- 2 avocados
- 1 tsp cumin
- 1/4 tsp salt
- 1/4 pepper
- Lettuce or buns of choice, for serving
Instructions
- Preheat grill.
- Mix ground chicken with onions, red pepper, cilantro, crushed red pepper, salt and pepper. Mix into 6 patties.
- Once grill is ready, add burgers and cook until seared on each side. About 5 minutes on each side.
- Meanwhile, in a small bowl, lightly mash avocado with salt, pepper and cumin. Do not mash all the way as you want some chunks to remain.
- When burgers are ready, place the guac on lettuce, then top with burgers and serve immediately.

*For Paleo, serve without buns as I usually do!
