Debate time. Skewers or kabobs? Which side are you on?

But I see it as this.

Skewers are what you thread the food on. The vehicle if you will. Kabob is the end masterpiece, the whole food item you get to devour. Sorta like the whole bread and toast thing.  You don’t add toast into a toaster. You add bread. But you are left with toast.

Too much for a Monday morning? I get it.

My own brain drives me crazy sometimes….

Whatever you want to call them, they are essential for grilling season. While I am much more of a bird gal, than a beef gal. Chicken is present about 99% of the time on our dinner table. Unless you throw some shrimp in there!

This is truly a weeknight wonder dinner. In under 25 minutes, you have a great meal on the table. Chicken is seasoned with just a few ingredients – salt, pepper and garlic powder – but the sauce is where it’s at. The magic if you will.

While the chicken cooks, simple whip up the 5 ingredient sauce (water doesn’t count here…). The base is peanut butter then mixed with Szechuan sauce, which can be found in your Chinese food aisle of your local grocery store. I have been adding this sauce to nearly everything from basting to chicken before baking, to brushing green beans before roasting to just dunking baked chicken into! So no need to fret about buying a whole jar for this. It won’t last long. If you are allergic to peanuts, simply swap sunflower seed butter! Easy peasy. OMG, I hate myself for just saying that.

Ingredients

  • 1 pound lean chicken breasts, cut into 1 inch cubes
  • 1 tablespoon olive oil
  • 1 tablespoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Szechuan Peanut Sauce:
  • 1/4 cup smooth peanut butter
  • 2 tablespoons Szechuan sauce
  • 1/4 cup water
  • 2 teaspoons rice vinegar
  • 1/4 lemon, juiced
  • For garnish, cilantro leaves

Instructions

  1. Skewer the chicken pieces onto 4 long skewers. Drizzle with olive oil and season with garlic, salt and pepper.
  2. Preheat a grill pan over medium heat. Place chicken skewers onto grill pan. Cook 2-3 minutes on each side until no longer pink on the inside and chicken reaches 165 degrees F.
  3. Meanwhile, in a small bowl, whisk together the ingredients fro the peanut sauce.
  4. When chicken is done cooking, serve immediately with the Szechuan Peanut Sauce and cilantro.

    I like your logic! Seriously..it makes sense. Growing up we always called them kabobs but I seem to see skewers all over Pinterest so...who knows. Either way, these look delicious!
