I have been craving strawberries like something fierce lately. As in buying the CostCo size container and it is gone before the husband even knows it’s in the fridge.

Every man for themselves, we like to live by.

Not really but with some food, it is a battlefield around here.

I cannot get enough fruit lately. Apparently the babes has a love of natural sweets because they definitely do not have Mama’s sweet tooth. Sad day for sure. Rather, a love of salty and crunchy foods. Definitely following the hubs love of savory treats. Let’s hope this isn’t a glimpse into our future…

Strawberries have been making their way into nearly every meal. From morning bowl of oats, to a large bowl of berries with a dollop of vanilla greek yogurt, to just devouring a whole bowl before any meal is placed on the table.

Moving into my second trimester and being able to consume nearly all veggies again – thank goodness! – salads have been making a way into my life again each day! A classic and simple lunch time favorite is my cucumber and strawberry poppyseed salad but also at dinner with loads of avocado and pretzel crusted chicken.

I couldn’t stop making these honey mustard pretzel crusted chicken bites (salty craving…) and couldn’t deny my strawberry craving so they both ended up in a bowl for dinner. With zucchini noodles, loads of blue cheese, avocado and bacon. All drizzled with a strawberry dijon mustard sauce.

Presto! Dinner perfection!

Ingredients

  • 1 recipe Honey Mustard Pretzel Crusted Chicken Bites
  • Strawberry Dijon Dressing:
  • 1/4 cup dijon mustard
  • 2 tablespoons honey*
  • 1/2 heaping cup diced strawberries
  • Salad:
  • 6 large zucchinis, spiralized
  • 1 cup sliced strawberries
  • 1/2 cup crumbled blue cheese
  • 1 avocado, sliced thin
  • 4 slices cooked bacon, crumbled

Instructions

  1. Chicken: Prepare the chicken according to the instructions.
  2. Dressing: Add the dijon mustard, honey and strawberries to a blender. Mix until berries are pureed and mixture is completely combined.
  3. Salad: In a large bowl, toss the zucchini noodles with the strawberry dressing.
  4. Divide the zucchini between 4 bowls. In rows (if you wish for a true cobb salad), add the strawberries, blue cheese, cooked chicken, sliced avocado and crumbled bacon.
  5. Serve immediately.

Notes

*Can reduce honey to 1 tablespoon if strawberries are really sweet br]*This is the [spiralizer I use and love!

    Meg- this has got to be one of the most beautiful meals I've ever seen. Cheers to strawberries, I can't keep 'em around here long enough to make the Strawberry Rhubarb Crumble I've been promising. (Odd- they aren't touching the rhubarb.) :) We know all about fridge battles. So will definitely be trying this, love all the great ingredients and flavor pop of the pretzels!

    This salad looks absolutely AMAZING!! As in I could eat this everyday and I am not a super huge salad eater! I had a lot of fruit cravings with my last two babies. I craved a lot of watermelon, which is really hard to find in the winter. :)

    Honey mustard pretzels are totally my guilty pleasure. I can't buy a bag unless I'm sure someone is home to eat them with me. This chicken combined with the salad looks amazing! And probably good for me since you use normal pretzels so I won't be tempted to eat the whole bag beforehand :)
