Ah, it’s that time of the year again.
You are probably thinking its the time that most people start falling off the “This is gonna be my healthiest year yet!” resolution. Or, you are thinking that we are already half way through January, and February will be here before we know it. Scary I know. But it’s that time of year again that everyone starts to plan their menu for Superbowl!
Every man’s dream of bar food and football.
Or I like to think, my second favorite food holiday, second to Thanksgiving of course.
It’s the event where I can get creative with our favorite bar food. This week, we have covered a couple recipes that will be on our Superbowl menu. First, some sweet potato fries and revamping them. May not be the healthiest but come on, they are covered in marshmallows! Veggies are healthy right? Right. Secondly, garlic teriyaki wings in the slow cooker. These are a must. No buts about it. The meat is fall off the bone tender and the sauce is a honey, garlicky and perfect in every way. To round things out, cheesy corn stuffed jalapeños!
I have been playing with this idea for quite some time. Not sure what took me so long. You see, I make this cheesy corn (yes, the one that everyone loves) that is loaded with sweet corn, gooey cheddar and is held all together with a box of Jiffy cornbread mix. This stuff is like crack and it brings all the boys to the yard. Or to the kitchen really. A few years ago, as in the first few months of dating my now husband, I took some friends to our lake house for the 4th of July. I made my famous cheesy corn to go with our burgers one night. The boys fell in love. The next day the put it on top of their ham sammies. Have you ever experienced those? Hawaiian rolls loaded with ham and swiss then covered in a butter mixture and baked? Completely sinful bit but utterly addicting. Only 20 something year old boys would create a concoction of corn and sammies. But to them, it worked.
And ever since then, the cheesy corn must be on the menu each lake season.
That got me thinking one day, cheesy corn stuffed into peppers. We all like jalapeños stuffed with cream cheese so why not step it up a notch with cheesy corn? And let me tell you, everyone gave me two thumbs up. Tender cornbread like texture with gooey cheese sits atop a spicy jalapeño. Heat and sweetness are a match made in heaven.
Oh ya, there is bacon.
But does that need much explaining? Didn’t think so.

Ingredients
- 1/4 cup cornmeal
- 1 cup low fat cheddar cheese, shredded
- 1 cup corn kernels, fresh or frozen & thawed
- 1 large egg, lightly beaten
- 1/2 cup plain fat free greek yogurt
- 1 Tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1/4 tsp onion powder
- 12 large jalapenos, sliced in half lengthwise & seeds removed
- 6 pieces turkey bacon, sliced in half lengthwise
Instructions
- Preheat oven to 415 degrees F.
- Line baking sheet with foil. Spray with non-stick cooking spray.
- In a medium bowl, whisk together the egg, yogurt, oil, salt, pepper, garlic and onion powder. Add the cornmeal and mix. Then stir in the cheddar and corn. Mix well.
- Divide the mixture among the jalapenos; making sure not to fill them too full.
- Start wrapping each jalapeno with the bacon pieces; trying to finish the bacon so it face down on the baking sheet. (This will ensure it will not fall off during the baking process.)
- Place in oven and bake for 20 minutes. Turn on broiler and broil until bacon is crispy on top, around 5 minutes. Time will vary depending on how hot your broiler is. So please keep an eye on it so it does not burn!
- Remove from oven and allow to cool for a few minutes then serve!
