A simple fundido style appetizer with creamy goat cheese, tart cherries, balsamic drizzle, honey and pistachios that will go from oven to table in a matter of minutes!
I believe every Friday should come with an easy button.
From the moment your alarm goes off, your luxurious, steamy shower will be awaiting; your outfit of the day neatly pressed and hanging in the closet; then to leisurely trout your way to the kitchen to find your delicious mocha awaiting (iced or piping hot, your pick); and your perfectly browned toast popping up out of the toaster to be lathered with a rich, buttery spread; then to have your driver pull up at moments notice to whisk you off to work.
THEN reality smacks you in the face like a cold, splash of water. No bueno.
When I was little, I was obsessed with The Jetson’s. Like how cool was Rosie, the robot maid?! But my real favorite from that show…the automatic make up applier! Oh I still dream of how marvelous life would be if a robot would apply my make up in .2749 seconds. I loathe the getting ready process. Odd considering I am a girly, girly.
Yes, I know I’m weird.
But goodness, think of the time saved if we all had robots and flying cars! By the way, didn’t some smart dude say we would have flying cars by now?! I’m patiently waiting…
Back to reality where robots that apply your makeup instantly and flying cars are still centuries away, an easy button is all we get.
An appetizer that is as simple as hitting an easy button is right here. Goat cheese is layered in a cast iron skillet with tart cherries and drizzled with balsamic. After a quick trip in the oven, simply sprinkle with chopped pistachios for crunch and drizzle with honey to tie it all together.
The dreamy part about this dip is that there is no pre mixing needed. Simply layering all the goods into the cast iron skillet is it. Throw her into the oven then dust off your hands and pour yourself a glass of merlot.
How about that for an easy button?
- 8 oz creamy goat cheese [i](such as Vermont Creamy Goat Cheese)[/i]
- 12 oz frozen cherries, thawed
- 1/4 cup balsamic vinegar
- 2 Tbsp honey
- 1/4 cup chopped pistachios
- 1/2 tsp salt
- 1/2 tsp pepper
- Preheat oven to 375*F.
- In a cast iron skillet, add goat cheese then add cherries on top. Drizzle with balsamic vinegar and sprinkle with salt and pepper.
- Bake for 25-30 minutes, or until cheese is soft and cherries are bubbling hot.
- Remove from oven, drizzle with honey and top with chopped pistachios.
