On a scale of 1 to 9, what is your love of caprese?
I am talking flatbreads, thrown into pasta or even burgers. I have seen caprese take on many forms but something about a classic caprese salad is hard to resist. The creamy, fresh mozzarella, tangy tomatoes, earthy basil and all drizzled with a tangy balsamic drizzle. It is a simple, no cook meal that can be thrown together with minimal ingredients. Often times, pantry staples during the summer days!
It’s rather embarrassing how many times a week I indulge in a caprese salad of some form. Some days, I throw in grilled chicken or add another summer love: zucchini!
Not just sliced zucchini, rather zucchini noodles! We all know my love of spiralized veggies…
To make my life easier and to keep healthy ingredients on hand, ready for meal time, I love to spiralize the veggies at the beginning of the week and store them in an airtight container in the fridge. Then when lunch or dinner time rolls around, I have the base to endless recipes at my fingertips! Such as my Teriyaki Zucchini Noodles? Ready in nothing flat! And in similar fashion, this Zucchini Caprese Salad is ready in a short 20 minutes. My kinda meal! Momma doesn’t have much patience these days…
No cook meals are life savors. But I am not talking about peanut butter and jelly sandwiches. Which are still fantastic, but most days I am searching for a more nutritious meal. The base is zucchini noodles, then cherry tomatoes that have been marinated in garlic, salt, pepper and balsamic vinaigrette. Simply add the tomatoes to the zucchini noodles along with fresh mozzarella and toss gently. Sprinkle with fresh basil and you have yourself one plate of bliss!
PS…Totally forgot the mozzarella in the photos. Please don’t hate me. Pregnancy brain is a thing and it is in full swing.

this is the perfect salad to whip up in a moments notice! Spiralize the zucchini ahead of time, toss with tomatoes and cheese, then store in a sealed container. I prefer to toss with chopped tomatoes only a day or two before to save the freshness of the tomatoes.

Ingredients
- 4 cups halved cherry tomatoes
- 3 garlic cloves
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup light balsamic vinaigrette
- 4 medium zucchinis, spiralized or cut with a madeleine
- 4 ounces fresh mozzarella, optional
- 1/2 cup lightly packed basil, julienned
Instructions
- In a large bowl, combine the halved cherry tomatoes, garlic, salt, pepper and balsamic vinaigrette.
- Add the zucchini and mozzarella to the bowl. Toss to combine and set aside for 10 minutes for flavors to combine.
- Divide mixture between 4 plates. Top with julienned basil and serve immediately.
