So nice of you to show your face. Once again, Monday’s are love hate relationships. More on the hate than love.
I am not going to state the obvious on why we all strongly dislike Mondays. But I am going to (probably only time) tell you why I love Mondays.
I am a Type A. If you are as well, then you know how much you strive and function off a schedule. One thing goes out of work or doesn’t work out and I immediately start to rearrange my ‘schedule’ too accommodate. I would love to say that I am more of ‘go with the flow’ type person, but sadly I am not. I can’t lie to you! We are friends after all.
But when a day goes smoothly in my world, I am one happy girl. I feel accomplished as I have probably checked off every box on my to do list (even adding things that I did just for the sure satisfaction of checking them off. Pathetic much?). And one of those checks is a simple, yet comforting dinner that is on the healthier side.
We have had our fare share of salads the past couple of weeks. I really didn’t intend to share so many salads in a row. But life happens (wait…is that a contradiction to a Type A?!) and you all seemed to enjoy them! I don’t blame ya. That blueberry goat cheese salad is mah life right now. So good!
To balance all those salads, lets all eat some carbs. Mmkay?
It is no secret that I am no the biggest fan of pasta dishes; just look at my lack there of recipes on the blog. I crave pasta maybe once every 4 months. And when I do. I better listen and ASAP.
I am not talking a cheesy, alfredo laden pasta. I am talking a veggie filled, light sauce, if any, over corkscrew pasta (so fun to eat) or over my favorite pasta of all, gnocchi. What makes gnocchi so addicting? Those pillowy nuggets? The smooth, velvety texture? The ease of cooking? All three of those contribute to my love for it. They instantly make any dish upgraded. They cook up in about 5 minutes making it ideal for a weeknight dinner. And the add ins are my go to flavors.
Do you have your ‘go to’ flavors? Make its blue cheese, mushrooms and caramelized onions. Or like mine, sun dried tomatoes, kale (or spinach), portobellos and parmesan. I can whip up any dish with satisfaction when I start with those flavors. And no I never get bored of them, if you were wondering.
Not when you have new ways to enjoy them! So when I got my craving for pasta, I knew gnocchi with my go to flavors was the way to go. This is actually the pasta that Mr HIT and I use to make almost weekly when we first started dating. It was simple, usually had the ingredients on hand and came together in under 30 minutes. Which was necessary when we were hungry and exhausted after a long day of work!
Monday. For once, I am happy to see you if you come bearing this Tuscan Kale & Sun Dried Tomato Chicken Sausage Gnocchi every time!

Yields 4
Ingredients
- 1 1/4 pounds basil chicken sausage, casings removed (or Sweet Italian Turkey Sausage if you cannot find this type)
- 5 cups chopped kale
- 16 oz sliced portobello mushrooms
- 1/2 cup sun dried tomatoes (not in oil)
- 1 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried basil
- 1/2 cup shave parmesan cheese + more for garnish
- 1 pound gnocchi i](I love [DeLallo's !)[/i]
Instructions
- In a large skillet, add the chicken sausage. Saute until cooked through, 8 - 10 minutes. Add the chopped kale, portobello mushrooms, sun dried tomatoes, garlic powder, red pepper flakes, salt, pepper and dried basil.
- Meanwhile, cook the gnocchi according to the package instructions. Drain and set aside until the meat mixture is cooked if they finish before.
- Once the gnocchi is finished, add it to the meat mixture along with the parmesan cheese. Toss well.
- Divide between 4 bowls and top with additional parmesan, if desired.
Notes
*This pasta tastes great reheated the next day! So make a double batch to knock two meals out in one cooking session!
