You know what is better than a grilled cheese?

A grilled cheese with THREE cheeses.

Gimme all the cheese!

Riddle me this. There are not many flavors that I love more than fresh tomatoes, garlic and basil. They are the classic Italian tastes that come to mind when I am in the mood for a huge bowl of comforting Italian fares.  But I rarely, I mean rarely actually incorporate them into a pasta dish.

Rather they are seen as flatbread or as a panzanella salad.

I’m not weird, right? Don’t answer that.

But today, my friends, those flavors are entering into a new world.

With Grilled Cheese Month wrapping up (tear!), I thought I couldn’t possibly pass it up without a thought! So when LiDestri Foods approached me to try out their pasta sauce, I gladly welcomed them with open arms (and a growling stomach.)   It is robust, sweet yet savory all in the same bite!  Although, I usually like to make my own pasta sauce, sometimes even a chef prays for loves shortcuts! This sauce has it going on. It is a ‘I totally made this sauce from scratch’ sorta sauce that I am proud to use in the kitchen!

And we all know three cheeses are better than two cheeses. But if you didn’t, now you do! A spread of softened butter and nutty parmesan are mixed together. As the grilled cheese browns, the spread turns extra crunchy and crispy. Totally mind blowing its so yummy.

I chose extra creamy and melty, fresh mozzarella along with salty and tangy blue cheese to smush inside. The mozzarella is the ideal cheese for grilled cheese. Oh the gooey, cheesy mess. I’m obsessed. And the blue cheese is the stinky cheese that I can never get enough of. As the grilled cheese cooks, the cheese starts to melt over the edges of the bread and gets all crispy.

Like fried cheese explosion. Oh yes. Devour.

Ingredients

  • 8 slices thick {gluten free} ciabatta bread
  • 4 Tbsp softened butter
  • 4 Tbsp grated parmesan
  • 4 oz fresh mozzarella, sliced thin
  • 4 oz crumbled blue cheese
  • 1 cup Francesco Rinaldi pasta sauce, warmed
  • Chopped Parsley, for garnish

Instructions

  1. Preheat a large skillet over medium heat.
  2. Mix softened butter and parmesan together in small bowl. Spread the outsides of the bread with butter mixture.
  3. Place 4 slices of bread butter-side down in the skillet and add 1 oz each of mozzarella and blue cheese top, topping it with the warmed marinara. Follow it with another slice of bread, butter-side up. Cook until the cheese is melty and each side is golden, about 4 to 5 minutes per side.
  4. Garnish with chopped parsley.
