I am speechless.

Literally, I have no words. I cannot even open my mouth.

Have you seen that commercial? I can’t help but laugh at all the times I have thought that people are speechless but have no trouble finding words to fill the silence.

While I may not be speechless, I am ecstatic. We sold our house! And bought a new one all in one day. Whoa. It was quite a stressful Saturday afternoon as the whole process was a jigsaw puzzle.  Dustin and I fell in love with a house in our ideal neighborhood last weekend. We put a full price offer on the house as we were still contingent on our house receiving an offer. Sadly, they turned down our offer and our dreams crumbled. Finding that house seemed rare as we both fell in love. We had yet to agree on one house. We were always divided with aspects of the house; the kitchen was cramped (or flat out ugly) or the backyard was too small and sloped. We butted heads and I was terrified we wouldn’t be able to agree on a house that wouldn’t break our bank and leave us eating boxed macaroni and cheese on the daily.

You wouldn’t mind revamps of boxed macaroni and cheese would you? Please say yes. No one needs or wants that.

But this house had everything we both loved and only a few things we didn’t. Luckily the ‘not so much’ aspects were all cosmetic and lucky wouldn’t break the bank to fix.  The kitchen cabinets needed to be stained as they had just installed gorgeous new granite countertops. Plus, the paint throughout the house was mostly grey neutrals. My love. So repainting is extremely minimal.  Something that didn’t seem possible as you always want to repaint upon moving into a new place. But with our turned down offer, we sadly looked onto other houses that just couldn’t compare.

A week went by, and we prayed for someone to fall in love with our house. Luckily that day happened and we received an offer on our house! Hallelujah! And to add another layer of excitement, our dream house still had not received an offer. But for the sake of your attention span (and mine), for us to accept the offer on our house, our dream house had to accept our offer. After much back and forth, a few needed glasses of wine, both offers went through and we ended up choosing our closing date! No few days where we are homeless and living out of boxes. We move from one straight to the next. Something we dreamed about our nice and stress-free that would but accepted the fact that it rarely happens.

After it was all said and done, we close end of April and get to start a new chapter of our lives in a the house of dreams! When we were first turned down, God had something else planned for us. While we didn’t know it would be the same house, we just had to wait a few more days for the pieces to fall into place. I always say, God’s timing is perfect. And I couldn’t agree more right now.

So how about some food? Whoa. With Easter right about the corner,  do you have your menu all planned out or still putting the pieces together?  This year, I don’t have to do much planning as I am going to the in laws and they always have a great feast planned! Smoked meats and honey baked ham this year. I will be in heaven!

I did ask if I can contribute and my mother in law always accepts. We may have plenty of food, but no one is left hungry. Thanksgiving, I came with my Caramelized Butternut Squash and Roasted Grapes Quinoa Salad but this year, I thought to go more of a savory route since everyone will have their fill of candy. Gooey mozzarella ties together the soft and earthy mushrooms, the sautéed kale and nutty quinoa. Then buttery prosciutto is tossed in to ensure every taste bud is hit.

This dish is great reheated so you can fix it ahead of time, then heat it right before serving!

Now that is a stress free holiday dish!

Ingredients

  • 1 cup uncooked quinoa, rinsed and drained
  • 2 cups unsalted chicken broth
  • 3 ounces prosciutto, thinly sliced
  • 8 ounces sliced baby portobello mushrooms
  • 1/2 teaspoon salt
  • 3/4 teaspoon black pepper
  • 3 ounces fresh mozzarella
  • 2 cups chopped kale

Instructions

  1. In a large sauce pan, cook the quinoa according to the packages instructions, replacing the water with the chicken broth.
  2. Meanwhile, in a skillet, heat over medium heat. Add the prosciutto slices and crisp up, about 5 - 8 minutes. Remove from the skillet and set aside to cool. Once cool, chop finely.
  3. Add the kale and mushrooms to the skillet over medium heat. Season with the salt and pepper. Cook for 10 minutes or until the mushrooms are soft. If the quinoa is finished cooking, add the vegetables to the quinoa. If not, remove from the heat and wait until the quinoa is finished.
  4. Once the quinoa is done cooking, add the mozzarella, kale, mushrooms and half of the prosciutto.
  5. To serve, add to a serving dish or individual plates and top with the remaining prosciutto.
