I have to admit my cherry obsession has been slightly overboard lately. I always remember cherry being my favorite flavor when I was little. Offer me a sucker? Cherry please! Sno cone? Douse with cherry syrup por favor.

So it’s no surprise that I have been starting my day and ending it with cherries. From cherry and macadamia nut french toast to cherry vanilla ice cream floats, I have been getting my fill.

But what about those cravings that hit during the day?  Luckily, this babe is craving all things fruit (and peanut butter) rather than real sweets. For once in my life…

I have been incorporating fruits into nearly any meal and dinner wasn’t out of the picture. So with Father’s Day around the corner, I had to think of a manly meal that my husband would be begging for seconds.  Although cherries don’t exactly scream ‘manly’, the roasted pork loin and the chipotle step it up a few notches.

And the hubs definitely couldn’t wait to devour it again.

This dinner is so simple. Just call it the ‘easy button’ if you will.

Simple season the pork with salt and pepper then sear on the stove top, pop into the oven and let her roast. Meanwhile, the sauce simmers away. Just add frozen cherries, maple syrup and chipotle tabasco sauce then let it simmer and reduce. You are left with a sweet and spicy sauce that is heaven when poured over the tender pork.

Oh and did I mention this is a 5 ingredient meal? And I don’t count salt, pepper and olive oil as they are typically pantry staples. But the flavor delivered you would think there was 25!

Winning.

Ingredients

  • 1.5 - 2 lbs pork tenderloin
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 16 ounces frozen cherries
  • 1/3 cup maple syrup
  • 1 tsp chipotle tabasco sauce, or to taste
  • Handful of cilantro leaves

Instructions

  1. Preheat oven to 400 degrees F.
  2. Trim the pork tenderloi of any fat. Heavily season with the salt and pepper.
  3. Heat olive oil over medium heat in a cast iron skillet or oven safe skillet.
  4. Add the pork and brown on all sides of the meat.
  5. Place pork into the preheated oven and cook until the internal temperature of the pork reaches 140 degrees, about 20 minutes depending on size. (This is a great time to use an oven safe thermometer.)
  6. Remove the pork from the oven and let sit until it reaches 145 degrees, about 7 minutes.
  7. While the pork is in the oven, add the frozen cherries and maple syrup to a sauce pan. Bring to a boil, then simmer until the cherries start to break down. Add to a high powdered blender and puree until smooth. Transfer back to sauce pan and simmer until sauce thickens, about 5 minutes. Remove from heat and add the chipotle tabasco sauce. Stir.
  8. Once the pork has rested and reached 145 degrees F, slice and drizzle with cherry chipotle sauce. Garnish with cilantro. Serve immediately.

    I've never tried pork and cherries together, but now I have to! I love cherries too and have to hold myself back from eating so many that I get a stomach ache.

      Hi Jess, I have not tried it but I would just add two tablespoons or so of water to make up for the moisture that frozen fruit releases when thawed. Enjoy!
