All the flavors of a juicy burger and loaded baked potato soup in one bite in this ultra creamy, delicious and lighter recipe!
How do you cure the Monday blues?
I’ve got a few ideas. So I’ll go first.
Reruns of RHOC (The Real Housewives of Orange County). Don’t judge. I have to get my trashy drama in somewhere and prefer in someone else’s life.
Online shopping on Ru La La. Those shoes. That purse. I need.
Fresh flowers from Trader Joe’s. All so gorg.
And a hearty potato soup trashed up with all the flavors of a juicy cheeseburger minus the grease…and the ketchup on your shirt.
Since it’s officially fall, or soup season I like to call it, that means my dutch oven get’s nice and cozy on our stove top and doesn’t move out until spring rolls around. Kinda how you make butt dents in your couch on Sunday’s while binge watching football and eating corn dip.
I can’t think of another soup that screams comfort and belly warming better than loaded potato soup. The creaminess and richness all topped with gooey cheese that makes the longest stings ever, making it nearly impossible to eat a spoonful gracefully. Then the bacon. Who can forget the bacon?
To keep this soup on the lighter side and your pants fitting just as they are, I swapped half of the potatoes with diced cauliflower. If you have never swapped the potatoes with cauliflower, it is an amazing starchy carb swap, such as in fried rice. Low on carbs, yet full of flavor. Steam the cauliflower, bake the potatoes, then puree with chicken stock for the velvety base for our soup.
Now for the delicious add in’s.
As if there was a way to improve potato soup, cheeseburger came into the mix. After browning ground turkey, I added a can of diced tomatoes and tomato paste along with steakhouse seasoning to get that juicy, smoky, peppery and ketchup loaded bite of a burger.
So many flavors are just the cure to any Monday blues that you may have! Now head to the couch, binge watch some football and indulge in a juicy cheeseburger – sans ketchup on the shirt.

Ingredients
- 2 medium russet potatoes
- 1 large head cauliflower, roughly chopped
- 6 cups low sodium chicken stock
- 6 pieces bacon, diced
- 1 medium onion, finely diced
- 1 cup finely diced carrots
- 1 cup finely diced celery
- 1.25 lean ground turkey (or lean ground beef)
- 1 can petite diced tomatoes
- 2 Tbsp tomato paste
- 2 Tbsp steakhouse seasoning (I used McCormick)
- 2 tsp garlic powder
- 2.5 tsp salt
- 1 tsp pepper
- 1 cup reduced fat sharp cheddar cheese, shredded
- 1 green onion, diced
Instructions
- Preheat oven to 375 degrees F.
- Pierce potatoes with a fork multiple times and place in oven. Bake for 45 minutes to an hour, or until soft. Remove from oven and allow to cool then chop.
- Meanwhile, steam cauliflower in a large dutch oven of bowling water for 8 - 10 minutes or until soft. Transfer to a large blender with 1 cup of the chicken stock. Turn on the blender and puree, adding more chicken stock to help move things along. Add potatoes once finished, add to blender and puree until creamy. Set aside.
- In a large dutch oven or stock pot, add bacon and cook. Once cooked remove from pot and set aside. Remove all but 1 Tbsp of bacon grease. Add diced onions, carrots and celery. Sauté until soft. Push to one side of pot and add ground turkey. Cook until no longer pink. Remove any grease that may be remaining in pot. Add cauliflower/potato mixture, can of tomatoes with juice, tomato paste, steakhouse seasoning, garlic powder, salt and pepper. Mix well.
- Serve immediately with chopped bacon, cheddar cheese and green onions.
